what am I doing wrong my photography teacher can't even explain it. What inexpensive film camera should i get that will get me through basic photography class with flying colors?

You can take black and white pictures with your Canon rebel SLR. There are two kinds of black and white film :
1. The old fashion kind like Kodak Tri-X. You can process such films yourself with just two chemicals - A developer like Kodak D-76 and a Fixer to keep the image stable after it has been developed and rinsed with water in the dark. - However, it will probably be difficult to get this kind of film developed quickly at your local drug store if you don't want to do it yourself.
2. For the past few years, a new kind of black and white film has been available which is processed in the same complicated bunch of chemicals that are used to process color negative film - Such films have the advantage that they can be processed anywhere that color film is processed. It would be difficult for your to process this kind of this film into negatives, but you could make black and white prints from the negatives yourself if you want to.

Your camera will take black and white photos if you use black and white film. There aren't many on the market any more. I used to use Tri-X, but I think it's been discontinued. A lot of photographers, today, will shoot color (film or digital). And after it's brought into the computer, they will convert it to black and white in Photoshop, burning and dodging it, similar to the chemical dark room.
I don't think too much of your photography teacher, if he/she can't explain why you can't take black and white photos.
If you ARE using black and white film, I don't see how you could get color photos.
I think your camera has a manual setting (M) which would allow you to learn photography. Using M, you would set the aperture and shutter speed manually. Whether or not you get through the class with flying colors, is up to you, the photographer...not the camera.
