Because of the ambiguity of the suffix "-ism", "Biblelism" might be misconstrued as referring to discrimination against certain versions of the Bible, or just as belief in the Bible in general. There is already a word that means essentially "adoration of the Bible": "Bibliolatry". Bibliolatry is thus probably the word you want; it's an already-established term and is less potentially ambiguous than "Bibleism".

However, "Bibliolatry" is not an especially common term, so you may still want to be careful to explain its meaning when you're using it, and you may want to simply skip the jargon and labeling altogether and just say what you mean with common words. For example, more people will understand the sentence "You adore the Bible excessively" than the sentence "You're a bibliolater". Ultimately, you have to consider your audience and find a way to balance comprehensibility with conciseness.

If the Bible itself is adored, then this is a form of idolatry. Idolatry is forbidden by Jews, Christians and Muslims.

Fundamentalists believe that every word in the Bible is exactly true and should not be challenged.

Many Christians today, are contextualists. They consider topics like author, type of literature, peace and war, customs of the enemy, etc, before rendering an interpretation. Fundamentalists encounter problems when they find apparent contradictions. Judas hanging himself or gutting himself is just one of many.

As long as you know what a fundamentalist is, and don't use the pop culture definition. Sure. But more than just Fundamentalists hold true to the Bible as their only source of Truth. A fundamentalist might be a liberal Christian or a conservative one, it just means that they hold the basic beliefs that are required to be a Christian.
