Marinate in Fat-free Italian salad dressing & bake. They're good with the Ranch, and also Catalina, too. Look for some of the seasoning sprinkles, like Mrs. Dash--my fave is garlic herb. It adds a lot of flavor but ZERO calories! Spray with butter spray & bake after sprinkling it on.
Cubed & marinated in Italian dressing, then threaded on skewers with green & yellow peppers, onions, and mushrooms and grilled is a GREAT healthy way to eat them!

This is a delicious, low-fat sauce you can simply pour over cooked chicken breasts:
MARK’S CUCUMBER-YOGURT SAUCE
1 pint plain yogurt
1 large cucumber, peeled, seeded and finely chopped
Juice of half a lemon, (more or less to taste)
Small to medium batch of mint leaves, chopped
(Or try cilantro or a cilantro/mint combination)
Half teaspoon cumin
Half teaspoon coriander
Salt and pepper to taste
For a thicker sauce, place the yogurt in a colander on top of another pan and allow it to drain in the fridge for an hour or two. Similarly, after chopping the cucumber, press the excess water out in a fine mesh sieve. Mix all of the ingredients and serve as suggested above. Other optional flavor enhancers include finely chopped onion or garlic.

CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
chicken breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream
Heat oil and butter in skillet. Add chicken to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Stir in sour cream. Serve cucumber sauce over chicken.

Baked, rolled in chopped pistachios or pecans. Sprinkle with greek seasoning first and some salt and pepper if you wish.
Baked and then in salad with olive oil, feta cheese, olives, lettuce, nuts, cranberries etc.

I marinade them in Lowrey's Jamacian Jerk sauce (no fat!). grill 'em up serve them on a bun w/ lettuce and whatever you like Or with some vege side dishes. 2 low fat alternatives....neither one requires a lot of work!
