Anyone happen to know what chord an open G would be if it were missing the high e string......sounds like a minor but i'm not sure!

Open G missing the high E string would still be a G chord. A major chord is a triad, meaning it is made up of three notes (G,B,D). If you took away the high E string your only losing one G note, you still have 2 other G's. It may sound slightly different but, it is still a G chord. Often, alternate ways to make a chord might sound slightly different only because it may put a little extra emphasis on other notes of the triad. You can use that to your advantage at times, I often use different forms of the same chord in a piece of music.

If you still have a high E string and took the open G chord and lifted your third finger so that you played it with the high E open, that would alter the G chord. It would now be G6 and would certainly sound different.

It would be a G - you only need the 3 notes for a G chord,
G - B - D . Usually people play a G note on the bottom string and the top string. Dropping the G on the bottom string might make it sound weird since now it's an E instead of a G but you already have all the main elements anyhow. Maybe some people with more theory will know something different since I am a little rusty.

why not just put a new string on?

if its the high e and its missing, it will still sound like a G chord

usually, i dont tend to play regular G chords, though
too poppy sounding
