LEMON PEPPER CHICKEN MARINADE
1 bottle Italian dressing
1 bottle honey dijon dressing
1 bottle balsamic vinaigrette
1-2 tsp. lemon pepper
Combine all ingredients and mix thoroughly.
Marinate 1-2lbs of chicken (overnight for best results) and grill. Yummy stuff!

MEDITERRANEAN MARINADE
The below marinade is a distinct Mediterranean marinade minus the soy sauce. I like the taste of the soy sauce but feel free to leave it out and simply add more salt. I particularly like this marinade for grilled vegetables and chicken although it would work well for lamb, sans the soy sauce.
1 pint olive oil
6 oz. soy sauce
Juice of 2 lemons
4 cloves garlic, minced
1 teaspoon chopped rosemary
Half teaspoon coriander seeds, ground
Half teaspoon fennel seeds, ground
Half teaspoon onion powder
Salt and pepper to taste

Drunken Marinade
1-2 ounce sage (or to taste)
1-2 ounce coarse black pepper (or to taste)
1-3 cup hard apple cider (to "break down" the chicken)
3 ounces soy sauce or maggi seasoning sauce (the Maggi sauce is saltier than soy)
Combine all ingredients and pour over meat to be marinated.
The estimated amount above marinates about 2 1/2 to 3 lbs of chicken.
Marinate in tightly sealed dish at minimum for about 1 1/2 hours (for mild intoxication;) I marinated overnight and had wonderful results.
Variations: Optional add-ins: garlic - I use powdered for the intensity- but crushed cloves of garlic will also be good...
splash of cayenne pepper sauce Rotel chiles and tomatoes A-1 sweet and tangy sauce Sriracha (or any flavor Vietnamese-style) chili sauce Substitution: Vodka or honey mead for Cider...

depends on what you like. One that is good is Honey and lime.
I use the juice from 2-3 fresh limes a little black pepper, and about 1/4 cup of honey. Great for chicken wings, and a nice alternative to the buffalo flavor.

Where I work at we brine our chickens first for ten hours in a solution of lemons (halved), Bay Leaves, Black Peppercorns, Thyme, Water, Chicken Stock, and a few other things.
After We Bring the chickens, we marinate them in Chicken Confit (Chicken Fat) and thyme.
We then roast the chickens, and my god, they're the most beautiful, succulent things you've ever tasted. try it

pineapple-ginger chicken
1 cup pineapple juice
3 tbs chopped crystallized ginger
2 tbs sesame oil
1 tsp minced garlic
1/4 cup brown sugar
combine all ingredients in ziploc bag. marinate chicken breasts overnight. grill over medium-high heat until cooked through. turning once, rotating 180 degrees after 3 minutes on each side.
