I have heard that roasting vegetables is fantastic!!! You can use any kind ( asparagus, onion, carrots, broccoli, peppers)...Coat them with some oil, put in 400 degree oven for about 20 mins. It suppose to bring out the flavor more than steaming, boiling.

You can also try epicurious.com, and cookinglight.com has a lot of good light vegetable recipes including one I love for carrot souffle. I serve that one often. A friend had it and said, "Wow, if I had had carrots like this as a kid, I would have loved them all my life." So, give that site a try. Be open, explore new things. Enjoy!

I always recommend trying ones you have never tried before. My favorite is oven fries made from ruttabegga or turnip. Globe artichokes are a delight. Steamed asparagus with parmesan, swiss chard, kale, snow peas. Another way to increase your intake is to add them to soups, stews, stir fries, etc. That way you don't just get the full on taste. My 12 year old daughter and I are vegetarian, so we find lots of creative ways to eat them. Tonight we are having "veggie" nuggets-the same breading as would be used on chicken, but on mushrooms, potatoes, eggplant and brocolli. When you think about it, hardly anyone eats plain meat. They season it first, or bread it, otherwise it doesnt have much taste. So, we just season our veggies the way we would season meat, and bake, fry, or grill them. Veggie kabobs on the grill are wonderful! Good luck

CHICKEN AND VEGETABLE STIR FRY
1 yellow pepper
1 or 2 large carrots, chopped
2 boneless and skinless chicken breast, cut into chunks
3 cups rice
1 1/2 of Yoshida's gourmet sauce
1 cup onion cut into strips.
Start rice first. Use a rice cooker for best results, following the manufacturer's directions. While the rice is cooking, it is best to do all the chopping and preparation.
When preparation is done, in a large Wok or frying pan, combine the pepper, carrot, chicken, sauce and the onions.
Let this cook for about 15 minutes, stirring occasionally. Don't let it cook too long; check your vegetable to see that they are still crunchy. Serve when chicken is done!
