Maybe some:
-Quick Taco Salad-
1 10 ounce bag prepared romaine lettuce
1 11 ounce can no salt added corn
2 tomatoes, diced
1/2 onion, diced
1 can fat-free refried beans
1/4 cup nutritional yeast
salsa

Mix the first 4 ingredients in a large bowl. Stir the beans and nutritional yeast together in a small pot and heat up just until warm and smooth. To serve, place some of the salad mix in a bowl and top with beans and salsa.

I used spicy refried beans, and that was a bit much, I think. I also think this would be good with diced bell peppers.

-Barbeque Chicken Tortilla Pizzas-
Makes 16 appetizers

2 Flour Tortillas (10" diameter)
1 1/2 cups BBQ'd shredded Chicken (I bbq a breast with bbq sauce and shred it myself)
2/3 cup chopped Tomato
2 cups shredded Monterey Jack Cheese with Jalepeno peppers
Salsa, if desired

Heat coals or gas grill for direct heat. Top each tortilla with 3/4 cup chicken, 1/3 cup tomatoes and 1 cup cheese.

Place tortillas on grill. Cover and grill 5" from medium heat 6-8 minutes or until chicken is hot and cheese is melted.

Cut each tortilla into 8 wedges. Serve with salsa.

I would serve a salad and garlic or cheese toast (depending on what kinds of seasonings you put in the peppers). When I make them, I normally don't do side dishes with bell peppers but that's what I would serve if I were going to!

Since the peppers often have a meat, rice, tomato base, your plate has one protein, a vegetable or two and a starch. That's fairly complex in flavor, so you might want to go basic for the side, like Roasted Green Beans.

Roasted Green Beans
1 lb. fresh green beans
2 tbs. olive oil
1 tbs. Balsamic vinegar
kosher or sea salt to taste

Preheat oven to 400° or use 350° Convection roast if you have a convection oven. Toss green beans with the oil and vinegar and spread them out on a baking sheet. Sprinkle with coarse salt. Roast in oven for about 15 minutes, watching carefully to be sure they do not over-brown. Look for nice golden brown color in patches. Be sure you get a good first helping. These are as addictive as popcorn, even for people who generally don’t like green beans.

Garlic or regular mashed potatoes and brown gravey. Or you can try this, it's real good.

Hash Brown Casserole Recipe

INGREDIENTS:
1 pkg. frozen hash browns (country style - 30oz)
1 cup sour cream
1 stick margarine (4 oz) or butter
1 can cream of chicken soup
1 T. instant minced onion (or freshly chopped onion to taste)
2 cups shredded sharp cheddar or colby cheese

PREPARATION:
Melt margarine. Place hash browns in 9 x 13 dish. Pour margarine over and mix well. Mix sour cream, soup, onion, and cheese in a large mixing bowl. Pour hash browns in the bowl and mix all together well. Then put all back in the 9 x 13 pan.
Bake uncovered at 350 degrees for one hour.

Corn tastes very good with stuffed bell peppers. You can get it right out of the can or get fresh. You can also serve garlic bread with it too.

Bell peppers stuffed with what ingredients? Someone suggested rice. However, here in Cyprus we stuff peppers with rice or rice/ground beef (dolma). In that case a side dish of rice would not be logical. When we have "dolma" we usually accompany it with plain yogurt or "cacik" (dzadziki in Greek).

Most people in New Orleans serve with Baked Macaroni, Corn, Potato salad/ Salad, and Buttered dinner rolls.
