Can crepes be cooked on a counter top skillet?

or do i have to do it on the stove top?

I have been to breakfast buffets where the crepe guy spent all morning making individualized crepes using just a counter-top skillet. No one complained about the crepes' quality and this kept the restaurant from having to put a second stove in the buffet area.
