I like Ichi Ro on 2nd Ave (I think its on 88th). They have some of the freshest sushi I've tasted, and one person can eat there (or get takeout) for under $20.

There are 2 of them on Manhattan, the food is out of this world, beautifully fresh and presented amazingly. One of our guests also had a shellfish allergy and the staff were very well informed and helpful. You can just describe the sort of things you like and they will come up with a perfectly sized and varied platter to suit your needs! It's also a beautiful restaurant. You will need a booking - you will not regret it!
Trust me, I love new york and sushi in equal measures, so this was the ONLY place to go!

Karuma Zushi on 47th between Fifth and Madison - second floor - has the most amazing food - it's very expensive, but, if you go for lunch (before 2pm), they have some lunch specials for $20 - the special lunch comes with soup. If you love sushi, this is the place to go - it will spoil you for the rest. You should have a reservation.

Sushi of Gari, there are two of them, one in the 70's on the east side and one in the 80's on the westside. one of the best places for sushi/sashami, but not cheap, but for fresh fish, you really have to pay.
There's always Masa for $320 a person minimum, in the Times Warner building.

Sakagura on 43rd St is pretty amazing, and not too expensive. You will have to book, though.
If you have money to burn you could always try Nobu!
