Chicken in Champagne Sauce
4 boneless chicken breasts
1 tsp thyme
1 tsp seasoned salt (Lawry’s)
1 tsp garlic salt or powder
6 tbs light margarine or butter
2/3 cup Asti Spumante or any sweet wine (use the cheapest you can find)
2 tsp flour (more if needed to thicken)
1 cup half and half or lowfat milk
Sprinkle chicken breasts with all seasonings. Heat butter in frying pan. Brown chicken. Add Asti or wine. Cover pan and simmer about 30- 40 minutes, turning twice, until chicken is tender. Remove chicken and keep warm. Thicken sauce with flour. Stir in half and half and heat sauce. Add chicken to sauce to coat. Makes 4 servings
Cajun Fried Chicken
4-5 boneless chicken breasts, boneless pork chops
1 cup of self-rising flour, unsifted
1 tsp garlic salt
1 tsp cayenne pepper
1tbs Dijon mustard
1/3 cup Tabasco
¼ cup water
1 – 1 ½ cups oil, for frying
Combine cayenne pepper, mustard, Tabasco, and water in plastic container or gallon size zip lock bag. If you pierce chicken with a fork first it will be a lot spicier (don’t do this unless you like it HOT!). Place chicken in marinade, turning to coat well. Marinate for no more than 1 hour, turning frequently.
Combine self-rising flour and garlic salt in a plastic bag or container. Add chicken to coat, one at a time is best. I use tongs so my hands don’t get messy.
Heat vegetable oil in large skillet on medium high heat.
Fry chicken pieces, turning once, for about 15-20 minutes total. Remove from pan immediately and keep warm. If you use regular pieces of chicken, with bone in, cook for at least 30-45 minutes, or until done.
Serving Suggestions:
Garlic flavored pasta or garlic mashed potatoes and green beans or broccoli.
Quick Chicken Parmesan
4 Boneless Chicken Breasts, pounded flat
1 jar Spaghetti Sauce (I use Prego mushroom and garlic)
3 oz. Mozzarella Cheese, grated
2 cups Italian Bread Crumbs
2 oz. Parmesan Cheese
1/2 tsp garlic salt
1 egg, plus 1 tbs water, slightly beaten
Mix Italian breadcrumbs, Parmesan cheese, and garlic salt together in bowl. Beat 1 egg in another bowl, 1 tbs water and a dash of garlic salt. Dip chicken in egg, then in crumbs and fry in oil until brown on each side (10 – 15 min each side). Pour spaghetti sauce over chicken and sprinkle with cheese, cover so cheese melts and serve. Makes 4 servings.
Chicken and Dumplings
1 whole chicken
1 bay leaf
2 tsp garlic salt
6 black peppercorns
6 cups of water
1 cup baby carrots
1 package refrigerator biscuits (10 – 12)
Place chicken in crock pot and add everything except carrots. Cook on low for about 8-10 hours. Remove chicken and de-bone. Pour broth into large pot on stove and heat until boiling. Add carrots and cook for 30 minutes. Thicken broth with cornstarch or flour mixed with cold water. Tear refrigerator biscuits into 3-4 pieces each and drop into boiling broth, lower heat and cover. Simmer for about 5 minutes, until biscuits puff up. Add chicken and carrots, stir, and serve

2 frying chickens with skin, each cut into 6 pieces
6 cups Crisco cooking oil
1 egg, beaten
2 cups milk
2 cups all- purpose flour
4 tbsp salt
2 tsp black pepper
1 tsp msg (monosodium glutamate)--you can use Accent flavor enhancer
Pour the oil into the pressure cooker and heat over med. heat to about 400 F.
In a small bowl, combine the egg and milk In a separate bowl, combine the
remaining four dry ingredients. Dip each piece of chicken into the milk until
fully moistened. Roll the moistened chicken in the flour mixture until completely
coated.
In groups of four or five drop the covered chicken pieces into the oil and lock
the lid in place. When stem begins shooting through the pressure release, set
the timer for 10 minutes. After 10 minutes, release the pressure and remove
the chicken to a paper towels or a metal rack to drain. Repeat with the remaining
chicken.
Makes 12 pieces

Chicken Marsala

1/4 cup all-purpose flour for coating
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon dried oregano
4 skinless, boneless chicken breast halves - pounded 1/4 inch thick

1 cup sliced mushrooms
1/2 cup Marsala wine
1/4 cup cooking sherry
DIRECTIONS
In a shallow dish or bowl, mix together the flour, salt, pepper and oregano. Coat chicken pieces in flour mixture.
In a large skillet, melt butter in oil over medium heat. Place chicken in the pan, and lightly brown. Turn over chicken pieces, and add mushrooms. Pour in wine and sherry. Cover skillet; simmer chicken 10 minutes, turning once, until no longer pink and juices run clear.

Not only Chicken But Slow Cooker too!!
SLOW COOKER CHICKEN
4 whole chicken breasts
juice of 2 lemons
paprika, celery salt, salt & pepper to taste
1 10 oz can cream of mushroom soup
1 10 oz can cream of celery soup
1/2 cup parmesan
rinse chicken and pat dry, toss with lemon juice, paprika etc.
place in slow cooker
combine soups in a medium bowl, mix well
spoon over chicken, sprinkle with cheese
cook on low for 6-8 hours until done to taste
You can also substitute a whole chicken. great for a small dinner party.

Makes: 5 servings
3 cups buttermilk
1 broiler-fryer chicken (2-1/2 lb.), cut up
25 RITZ Crackers, finely crushed (about 1 cup)
2/3 cup flour
1 tsp. salt
1/2 tsp. ground red pepper
2 cups oil
POUR buttermilk over chicken in shallow dish or resealable plastic bag; cover and refrigerate 1 hour to marinate. Remove chicken from marinade; discard marinade.

Wonderful Chicken Pizza With Fresh Basil:
40 min 25 min prep
4 servings
Pizza Sauce
1 tablespoon olive oil
3 cloves garlic
1 (6 ounce) can tomato paste (no salt added)
1/2 teaspoon ground coriander
1/2 teaspoon dried oregano
1/4 teaspoon ground cumin
1/2 teaspoon salt
crushed red pepper flakes, amount depending how spicy you like your sauce to be (I used 2 tsp)
1/2 cup dry white wine
2 tablespoons ketchup
1/2 lemon, juice of
3 tablespoons fresh basil, chopped
Topping
3 (2 ounce) boneless skinless chicken breast halves
salt & freshly ground black pepper
1 teaspoon dried basil
1/2 teaspoon ground coriander
1/2 teaspoon dried oregano
1 tablespoon olive oil
1/2 lemon, juice of
1 small red bell pepper, diced
1 cup mozzarella cheese, shredded (amount depending on how cheesy you like your pizza)
1/4 cup parmesan cheese, freshly grated (amount depending on how cheesy you like your pizza)
1. Sauce: Heat olive oil in a saucepan over medium-high heat; fry garlic for 1 minute, until fragrant
2. Add tomato paste, coriander, oregano, cumin, salt and pepper flakes; give the mixture a good stir
3. Turn the heat down to medium, and add the white wine, ketchup and lemon juice
4. Simmer sauce for 1 minute (low heat), then stir in the chopped basil; remove from heat, cover and set aside

10. Spread the sauce on your favorite pizza crust, scatter the cooked chicken and diced pepper over the sauce
11. Top the pizza with mozzarella cheese and bake for approx 10-15mins (depending on your crust)
12. Remove from oven, sprinkle with grated Parmesan, and serve immediately
