Pineapple Upside Down Cake

This recipe is by far the best Pineapple Upside Down cake that I've ever made. It is also quick and easy. The cake is very moist and rises much higher than the average recipe. The combination of pineapple cake mix and pineapple juice isn't overwhelming either.

1/2 cup butter
1 cup packed brown sugar
1 (20 ounce) can sliced pineapples
6 maraschino cherries, cut in half lengthwise
1 (18 ounce) package duncan hines supreme pineapple cake mix
1 (4 ounce) box vanilla instant pudding mix
1 cup pineapple juice, from canned pineapple with a bit of water added
1/2 cup canola oil
4 eggs

Preheat oven to 325 degrees Fahrenheit.
Melt butter in a 9x13 pan in oven.
Sprinkle brown sugar evenly over butter in pan.
Drain canned pineapple into a measuring cup.
Place pineapple slices evenly in pan, cutting the last two in half to cover pan.
Place the maraschino cherry halves in the center of the pineapple slices, cut side up.
Combine the rest of ingredients in a large mixing bowl on slow speed for 30 seconds.
Beat on medium speed for 2 minutes.
Pour batter into pan.
Bake for 45 to 55 minutes, or until a toothpick comes out clean.
Cool 5 minutes and turn cake out onto a serving platter, pineapple side up.

INGREDIENTS
2 cups all-purpose flour
2 cups white sugar
2 eggs
2 teaspoons baking soda
1 teaspoon vanilla extract
1 (20 ounce) can crushed pineapple with juice
1 (8 ounce) package cream cheese
1/2 cup butter
1 1/2 cups confectioners' sugar
1 teaspoon vanilla extract
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mix together the flour, sugar and baking soda. Make a well in the center and add the eggs, vanilla and crushed pineapple, with liquid from can. Mix well to blend.
Bake for 45 minutes, or until a toothpick inserted into cake comes out clean.
To make the frosting: in a medium bowl, combine cream cheese, butter, confectioners sugar and 1 teaspoon of vanilla. Beat until creamy. Spread on warm cake.

Best Pineapple Cake:

2 eggs
2 cups sugar
1 teaspoon vanilla
2 cups flour
2 teaspoons baking soda
1 cup walnuts (crushed)
1 (8 ounce) can crushed pineapple, DO NOT drain (put the whole thing in)

1. Mix all together, and pour into a greased 13x9 inch pan. bake at 350 for 30 - 35 minute
2. Frost with cream cheese icing.

Hummingbird Cake

INGREDIENTS:
3 cups all-purpose flour
2 cups white sugar
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
3 eggs, beaten 1 1/2 cups vegetable oil
2 teaspoons vanilla extract
1 (8 ounce) can crushed pineapple, drained
1 cup chopped pecans
2 cups diced bananas
1/2 cup chopped pecans

1 (8 ounce) package cream cheese
1/2 cup butter, softened 4 cups confectioners' sugar
1 teaspoon vanilla extract

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a large cookie sheet with sides, or an 11 x 17 inch jelly roll pan.
2. Combine flour, white sugar, baking powder, salt, and cinnamon in a large bowl. Add eggs and oil; stir until moistened. Do not beat. Stir in bananas, 2 teaspoons vanilla, pineapple, and 1 cup pecans.
3. Bake for 25 to 30 minutes, or until done. Cool on a wire rack.
4. Beat 1/2 cup pecans, cream cheese, butter or margarine, confectioners sugar, and 1 teaspoon vanilla together until light and fluffy. Spread over the top of the cooled cake.

this is a really delicious pineapple cake and its SO easy to make! enjoy

2 cups sugar

8 ounces cream cheese
1/4-1 cup butter
1 teaspoon vanilla

Mix sugar, flour, eggs, baking soda and pineapple.
Add nuts and mix again.
Pour into greased and floured pan (s).
Bake 40 minutes at 350F degrees.
-------Frosting------Frost when cool with cream cheese icing: Mix sugar, cream cheese, butter and vanilla.

The easiest to make and oh so good.

1 (18.25 ounce) package reduced fat yellow cake mix
1 (20 ounce) can crushed pineapple with juice
3 eggs
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Spray a 9 x 13 inch pan with non-stick cooking spray.
Combine cake mix, pineapple (with juice), and eggs until well-mixed.
Pour into pan, and bake 30-35 minutes.

INGREDIENTS:
1/2 cup margarine
1 1/2 cups sugar
1/2 teaspoon vanilla
1 cup crushed pineapple -- undrained
2 1/2 cups cake flour
1 tablespoon baking powder
dash salt
1/4 cup water
3 egg whites -- beaten until stiff
PREPARATION:
Cream margarine with sugar and vanilla until fluffy. Add pineapple. Sift dry ingredients together; add to creamed mixture alternately with water. Fold in egg whites; pour into a greased and floured loaf pan. Bake at 350 degrees for about 1 hour, or until done. Glaze with a powdered sugar glaze, if desired.

Pineapple Whip Cream Cake

No. 2 can crushed pineapple (2 ½ cups)
¼ cup sugar
¼ cup cornstarch
2 layers white cake (cake mix) prepared per package directions

Combine first 3 ingredients in a small saucepan. Cook over low heat until thickened, about 5 minutes. Make the 2 layer cake from a mix or using your favorite recipe. When cool, split one layer in half horizontally, making 2 layers out of one. Put one half on plate; spread with pineapple filling. Top with whole layer, top with more filling, top with final layer and put remainder of filling in the center of top of cake, leaving about 1 ½ inches around edge for frosting.

Whip Cream Frosting:

In saucepan, add 4 tbs flour and 1 cup milk Cook and stir constantly, until thick. Cool. Cream 1 cube oleo (imperial margarine) and ½ cup shortening together. Add 1 cup sugar and 1 tsp vanilla. Cream together. Mix all together on high speed on mixer.
Frost remainder of cake with frosting (sides and top edge). If more frosting is desired it can be added between the layers as well.




Pineapple Cake

2 cups sugar
1 stick butter (room temperature)
¼ cup vegetable shortening
4 eggs
1 cup buttermilk
2 ½ cups flour
1 teaspoon soda
1 teaspoon vanilla

Preheat oven to 350º.

Cream sugar with soft butter and vegetable shortening. Add eggs one at a time, beating well after each addition. Mix soda with flour; add alternately with buttermilk and beat well. Add vanilla. Pour into three well-greased and floured pans. Bake in a 350º preheated oven for 25-30 minutes. Cool layers.

Icing:

1 large can crushed pineapple
½ cup sugar
1 tablespoon cornstarch

Place ingredients in a saucepan. Cook until it thickens but is not stiff. Remove from heat and let cool.

Additional Icing:

1 box confectioners sugar, sifted
4 ounces cream cheese, softened
½ stick butter, softened

Mix well in a bowl with a mixer. Place layers on a plate adding pineapple mixture on top of each layer with the confectioners sugar mixture on the sides.

I love both fruits and fruit and vegetables better, however they look and taste. You desire a little of both.
