It depends of the apple.

Some apples like granny smith are tart and great for baking with because of thier firmness. They may need a bit of sugar.

Other sweeter apple don't need anything but a little cinnamon or nutmeg depending on the flavor you like.

I think it depends on the type of apple. Macintosh and spartan cook pretty well in the oven with the topping on. If I'm using granny smith or Ambrosia or Gala, I like to cook them a bit before so they aren't so hard. Some people like apples that maintain their shape when cooked; I don't, but it's a personal preference.

I make apple crisp and the recipe I use calls for about 1/2 tsp salt, 1/2 cup of sugar, 2 TBSP flour, 1 tsp cinnamon mixed in with the apples. Then the topping is brown sugar, flour and cinnamon. easy and delishious!!
