Great for the morning after sleepovers too, you can cut the recipe down if you want:
Double Banana Pancakes
Ingredients:
1 Cup All-Purpose Flour
1 3/4 tsp Baking Powder
3/4 tsp Salt
1 T Sugar
2 Large Ripe Bananas
3/4 Cup Soy Milk
2 Large Eggs
2 tsp Vegetable Oil
FOR TOPPING:
1 T Unsalted Butter
2 Large Ripe Bananas -- Sliced
Nutmeg -- Freshly Grated
3/4 Cup Maple Syrup -- Warmed
TO PREPARE PANCAKES:
In a large mixing bowl, sift together flour, baking powder, salt and sugar. Mix to blend. Set aside.
Puree bananas in a food processor, fitted with a metal blade to a smoth, liquid consistency. Transfer puree to a mixing bowl. Add milk, eggs and oil. whisk to blend well. Add dry ingredients - whisking to incorporate.
Preheat oven to 250 degrees fahrenheit. Heat a gridle. Add butter to bottom of pan. When butter is hot, ladel 2 T of batter onto griddle, cooking until the tops of the pancake bubble and the underside is brown. (2-3 minutes) Turn and cook other side until godlen brown - about 2 minutes more.
Transfer to a baking sheet. Continue until all the batter has been used.
TO PREPARE TOPPING:
Heat butter in a large skillet. When hot, add sliced bananas - saute, stirring constantly until bananas are warm, about 1 minute.
To serve - arrange 4 pancakes on each of 4 dinner plates - top with sauted bananas - grated nutmeg and warm maple syrup.

1 pound bacon
10 eggs
1 (16 ounce) can refried beans
8 ounces shredded Cheddar cheese
10 (10 inch) flour tortillas
DIRECTIONS
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and set aside. Wrap the tortillas in foil and warm in the oven.
Fry the eggs in a greased skillet until firm. In a small sauce pan heat the refried beans.
Top each tortilla with refried beans, 2 strips of bacon, 1 egg and a little cheese. Roll tortillas into burritos and serve

2 4 oz. boneless, skinless chicken breasts
4 oz. plain or vanilla soy yogurt (lactose free)
1 1/2 tsp. cilantro
1 1/2 tsp. curry powder
Utensils:
stove (You'll need help from your adult assistant.)

mixing bowl
Directions:
Preheat oven to 375 degrees Fahrenheit (191 degrees Celsius).
Combine yogurt, cilantro, and curry powder in a shallow bowl.
Add chicken to yogurt sauce and coat evenly.
Place chicken in a greased casserole dish.
Spoon remainder of yogurt sauce on top of the chicken.
Bake chicken for 35 minutes or until it's no longer pink in the middle.

Hominy grits are absolutely delicious .... add a little hot milk and some honey ..
McCann's Irish Oatmeal
Soft boiled egg served English style ....take out of the shell with a spoon and put into a little bowl with butter, salt and pepper .... and make some toast to dip into it....
Poached Eggs with Basil and Bacon .......in the bottom of each little egg poacher cup, put some butter, melt it a little, and then some crumbled bacon, a leaf of shredded basil, a little black pepper and then break an egg into the cup and steam it up ......delicious as a lunch dish for grown-ups, too
a croque-monsieur, cut in four pieces ..... YUMMY!!!!
fresh strawberries and sweetened ricotta cheese ... very summery, and serve about 1/3 cup of fresh orange juice ...

Hash Brown Casserole Recipe
INGREDIENTS:
1 pkg. frozen hash browns (country style - 30oz)
1 cup sour cream
1 stick margarine (4 oz) or butter
1 can cream of chicken soup
1 T. instant minced onion (or freshly chopped onion to taste)
2 cups shredded sharp cheddar or colby cheese
PREPARATION:
Melt margarine. Place hash browns in 9 x 13 dish. Pour margarine over and mix well. Mix sour cream, soup, onion, and cheese in a large mixing bowl. Pour hash browns in the bowl and mix all together well. Then put all back in the 9 x 13 pan.
Bake uncovered at 350 degrees for one hour.
My daughters favorite breakfast is small links (hot dogs or lil smokies) wrapped in cresent rolls and baked for about 15-20 minutes. Dipped in catsup or honey mustard. With scrambled eggs and Orange juice.

I have a two year old, they are pretty easy--- I usually start her with plain honey nut cheerios while I cook her something hot--- Her first words in the morning lately have been EGGIE! MILKIE! so after her cherrios she has a fried egg and sippie cup of milk-- its not a recipe but only a suggestion..Good Luck!
