GROUND BEEF AND NOODLES CASSEROLE

1 pound lean ground beef
1/2 cup chopped onion
1/4 cup chopped green bell pepper
1 small can corn, undrained (8 ounces)
8 ounces tomato sauce
1/4 cup sliced ripe olives
4 ounces noodles, uncooked
2 cups water
1 teaspoon oregano leaves
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup cheddar cheese -- shredded

Cook and stir ground beef, onion, and green pepper in a large skillet until the meat is browned. Drain off the excess fat. Stir in undrained corn and remaining ingredients. Bring to a boil; reduce the heat and simmer, uncovered, stirring occasionally, until the noodles are tender, about 20 minutes. Serve hot. Serves 6.






BEEFY MACARONI CASSEROLE

1 1/2 pounds lean ground beef
1 cup chopped celery
1 cup chopped onion
1 can (14.5 ounces) tomatoes
3/4 cup uncooked macaroni, cooked and drained
1 1/2 cups shredded cheese
2 teaspoons Worcestershire Sauce
3/4 teaspoon salt
1/4 teaspoon pepper

In a large skillet, heat oil over medium heat; add ground beef, celery, and chopped onion. Fry until beef is browned and onions are tender. Remove from heat and put into large casserole. Add the tomatoes, the cooked macaroni, shredded cheese, sauce, salt and pepper. Bake at 350° for 30 minutes, until hot and bubbly. Sprinkle beefy macaroni casserole with chopped parsley, if desired.

Alpine Meatballs

1/2 lb. ground beef
1/2 lb. ground pork
1-1/2 cups shredded Swiss cheese, divided
1 egg, beaten
1/2 cup finely chopped onion
1/4 cup chopped celery leaves
1/4 tsp. ground nutmeg
1/4 tsp. allspice
1 cup cooked rice
10 oz. can condensed cream of mushroom soup
3/4 cup milk
3 cloves garlic, minced
1/2 cup grated Parmesan cheese
2 cups cooked rice

Preheat oven to 350 degrees. In large bowl, combine beef, pork, 1/2 cup Swiss cheese, egg, 1/2 cup finely chopped onion, celery leaves, nutmeg, allspice, and 1 cup cooked rice and mix gently. Form into 1" meatballs and place on a large baking pan.

Bake at 350 degrees for 20-30 minutes until browned.
Combine 1 cup Swiss cheese with soup, milk, garlic, Parmesan cheese, and 2 cups cooked rice in large bowl. Add cooked meatballs and mix gently. Pour into 3 quart baking dish. Bake 325 degrees 40-45 minutes, until sauce bubbles around the edges.

To freeze, bake meatballs and cool completely in refrigerator. Combine with remaining ingredients and pour into lined baking dish. Wrap, label, and freeze up to 3 months. To thaw and reheat, thaw overnight in refrigerator. Stir casserole gently, then bake at 350 degrees for 30-45 minutes until hot and bubbly. Serves 8

How about tri tip soft tacos?

This is what you need:
crock pot
Tri tip meat
1 jar of your favorite salsa
water
warm flour tortillas
shredded cheese
shredded lettuce

optional

hot sauce
sour cream
avocado slices

How to:

throw the tri tip, salsa and a little water in the crock pot let it simmer until fully cooked.

Warm up the flour tortillas and add your favorite ingredients.

You can prepare fried rice with curry and chicken breast. Add a nice sauce, some vegetables and voila!

jsut a suggestion....my husband and I just had chille last night and I can't wait to have more tonight....love it, it's quick, easy and yummy!!! (we cheat and just use chille mix and canned beans) and of course burger.....I love it w/melted cheese and or sour cream on top......throw some bread and beer in the mix and wow what a meal!!!!! anyway, happy eating whatever you have.....it may give you a bit of gas...but hey...who cares....right...LOL
