All coffee beans are roasted prior to becoming coffee. Roasting is strickly a hot, dry method of cooking. Lighter roasts DO, however, retain more caffiene. Espresso roast actually contains less caffiene. But it is concentrated.

You cant cold roast coffee. You need heat to roast. If you are referring to brewed coffee, I would hazard a guess that there would be less caffiene leached from the grounds if you only used cold water.
