Crockpot Lima Beans
1 pound dried lima beans -- soaked overnight
drained
4 ham hocks -- halved
2 bay leaves
1 onion -- chopped
1 bell pepper -- chopped
2 cups chopped tomatoes
1 cup tomato sauce
1 teaspoon sugar
1/4 teaspoon ground cloves
1/2 teaspoon papper
salt -- to taste
Place beans in bottom of crockpot and add remaining ingredients with 1 1/2 quarts of water. Cover and cook on high 2 hours. Turn heat to low and cook, covered, 10 to 12 hours.
Serves 6.

this is really simple and still very tasty
CROCK POT TOMATO and LIMA BEAN SOUP
1 1/2 cups dried baby limas
1 large coarsely chopped onion
16 oz. can tomatoes or 2 c. fresh, chopped
1 teaspoon Worcestershire sauce
salt and pepper, to taste
1 dash Tabasco
chopped fresh cilantro or parsley, for garnish
Soak lima beans in water overnight. In the morning, drain the beans
and rinse well. Add beans to the crock pot, as well as the onions
and tomatoes, along with enough water to cover by 2 inches. Turn
crock pot on LOW and cook for about 9 hours. After 9 hours or so,
check to see if the limas are soft. If not, turn the pot up to HIGH
and cook for 1 hour more. When beans are soft, add the seasonings
and serve. If there is not enough liquid, add 1 c. water and cook
for 1/2 hour more.

This is a baked Beans Recipe. You can substitute the bacon for 'fakin bacon' if you're vegetarian.
Ingredients
10 strips bacon
2 tablespoons bacon grease
4 medium onions, chopped
1 (30-ounce) can pork and beans, undrained
2 (16-ounce) cans kidney beans, drained
1 (16-ounce) can lima beans, drained
1 (16-ounce) can cannelloni beans, drained
1/2 cup ketchup
1/2 cup firmly packed brown sugar
Instructions
Fry the bacon until crisp; reserve 2 tablespoons of grease. Crumble the bacon, and set aside. Heat the grease, and sauté the onions until clear. Drain the excess fat. Stir the onions together with the pork and beans, kidney beans, lima beans, cannelloni beans, ketchup, crumbled bacon, and brown sugar in a large Crock-Pot. Cook on the low setting for 2 hours.
Yield: 10 to 12 servings
Tips From Our Test Kitchen:
Adjust the amounts of the sugar, ketchup, and onions to suit your taste, and experiment with Great Northern, butter beans, and fava beans. This recipe is even better the second day.

take 2 or 3 smoked ham hocks (halved) , 1/2 to 1 pkg dried lima beans (pick through for rocks and bad beans),1 largechopped onion. place all in crock pot, cover with water by 2 - 2 1/2 inches. cook on low overnight app. 8 to 10 hrs or until beans are tender. serve with a good buttermilk cornbread and hot sauce.
