Has anyone heard of this soup? Apparently it's popular in Jamaica!!! ;)

it is extremely delicious it is my favorite soup...the first recipe is not Jamaican...we dont put flour in soup like a paste unless it is dumplings (spinners) we are making. Below is the Jamaican recipe:

Chicken foot soup
1 lb or 1/2 lb chicken foot
1/2 lb pumpkin
1 chocho
1 turnip
Some carrots
1 pk Chicken noodle soup mix or Cock Soup
Flour
Yellow yam
Salt to taste
Pimento seeds
Skellion
1 scotch bonnet pepper (don’t cut)
A quarter of breadfruit (green)


1. Strip the chicken foot (take off the yellow coating), cut off the tips of the toes.
2. cut up the pumpkin, chocho, breadfruit, carrots, turnip
3. wash all the above and put on the stove in a big pot. Keep adding water until cooked
4. knead flour with a dash of salt and some water, make into dumplings and put into pot
5. peel the yellow yam and put into pot
6. give it about 10 minutes to cook
7. season the pot with the skellion (scallion), pepper, pimento seeds
8. empty the pack of noodle or cock soup, allow to simmer for another 5 or so minutes before adding more salt to taste.
9. ENJOY!!!!!
Tip:
You can also put corn in the soup.

I dont know if it's the same recipie that I have. You need to wash about 12 chicken feet scalded and peeled.

Then make a stock with flat leaf parsley
Celery
Carot
onion
You can add a stock cube too.

Simmer for about an hour strain and use as you would any stock or serve as a consomme!

CHICKEN FOOT SOUP
Ingredients:
2 Pkg chicken feet,
-about 2 lbs
2 Chicken breast, boned,
-coarsley chopped
1 Chicken bouillion cube
2 qt Water for boiling
1 Small onion, peeled,
-coarsley chopped
1 Garlic cloves, minced
Green onions, chopped,
-tops and bottoms
Flour, for thickening liquid
4 Carrots, peel, cut into
-pieces 2“long, 1/4” wide
Oil, for saute
Salt/pepper to taste
1 t Dried oregano
1 t Dried Rosemary
Dry white wine... a cup
-or a quart, to your taste

Directions: Wash them chickens feet... scrub between toes... remove “toe-jam”. Rinse in clear water.

Wash and de-fat chicken breasts... remove skin and bones. Cut into small pieces. Pat dry with paper towels, and saute in hot oil or butter for a few minutes.

Add vegetables... and spices...saute a few minutes more. Stir, make onions soft but not browned. Add a little wine, cook over low heat for a few minutes while you drink a cup of the wine and some of the liquidevaporates... oh, yeah... do not cover skillet.

Boil water... add bouillion and dissolve (the bouillion). Throw in the whole mess from the skillet, all meat and vegetables... toss in the feet... bring to a boil and then simmer until the chicken is cooked and tender.


NOW... in a clean skillet... heat some oil... add some flour, equal measure... maybe 1/4 cup, each... over moderate heat, make a “roux”...browning the flour/oil mixture, but do not burn... add to the soup.
Cook the whole thing until slightly thickened... remove from heat... add the rest of the wine...heh...heh... cover... let set a few minutes... and serve with cooked rice (maybe add cooked rice to the soup... or seperately)
