Personally nothing. Just like beef I wouldn't want to mask the true flavor of the product, enhance it yes but not mask. Spices just before cooking will open up your olfactory senses and let you taste the true goodness. A nice Orange glaze will give your Salmon a little kick after it's cooked

Very simple all you need is
this is for like 2 fillets (the ones i get are usually 7oz but it really doesn't matter cause what i recommend is with the extra sauce make some with rice and spoon extra sauce on to the rice.


2 TBSP black bean sauce
4 TBSP Extra Virgin Olive Oil
2 TBSP red pepper paste
the juice of 3-4 lemons (need alot of juice)
garlic (minced or made into a paste) i usually use like a TBSP but it is to taste if u dont like to much don't use as much if u love garlic put more... you can also find blackbean sauce with garlic .....again then when u add more garlic add it to taste.....
black bean sauce can be found at any spuermarket in the asian section the red pepper paste i usually get from the middle eastern section but ask you locat supermarket

and then salt to taste but usually the black bean sauce is salty..

okay now mix all ingredint together and let the salmon marinate
i have sometimes let it marinate up to 12 hours (when i am making it as an entree for a dinner) but u need atleast 30 min (i usually only marinade it 30 min because im having it for dinner and it was decided last min and it is really quick and easy)
so you can either back it in the oven (if u do bake it at 350 cover it with foil and until the marinate that the salmon is in starts to boil when it boils remove the foil top it off with sliced scallions and chopped bell pepper and jalopeno [if you like spicy] then cook for another 2-5 min with out foil depending on how welldone you prefer your salmon and then place it on white rice and spoon the sauce over it YUMMMOOO

i do this for dinner by myself or for like a me and a friend i basically instead of turning on the oven for like 15-20 min i just wrap it up in foil and put it either on the grill or in the small toaster oven and same great taste

infact i think im going to have this for dinner

Salmon Marinade

1/4 cup lime juice
1/4 cup Worcestershire sauce
1 pinch dried thyme
1 tablespoon vegetable oil
In a small bowl, stir together the lime juice, Worcestershire sauce, thyme and vegetable oil. Mix well.
Cover all surfaces of fish fillet with marinade. Refrigerate and let stand as little as 30 minutes or as long as overnight.

Salmon with Creamy Orange-Dill Sauce

4 (4-ounce) salmon fillets
1/2 cup white wine
1/2 cup orange juice
1 teaspoon dried dill
Creamy Orange-Dill Sauce
1 cup nonfat yogurt
1/2 cup orange juice
1/2 cup finely chopped green onions
2 teaspoons dry dill

Combine white wine, orange juice and dill in a shallow dish or re-sealable plastic bag. Add salmon and marinate in refrigerator for 30 minutes, turning frequently.

Remove salmon from marinade and discard marinade. Cook salmon fillets on grill or broil for approximately 3-4 minutes per side or until salmon flakes easily with a fork. Combine all sauce ingredients in a small saucepan and heat over low heat. Heat through but do not boil. Additional orange juice can be added to reach desired consistency. Serve sauce over salmon.

Nothing. Salmon is wonderful and flavorful all by itself. After you have cooked it, try it with a little creamy dill sauce or with lemon juice and capers.

the chili flakes and lime does sound good though, and not too intrusive of the salmon's flavor.

Save marinating for fish that need a flavor boost or a tenderizing agent.

Salmon is one of those things you can go so many ways with. If you like southwestern, try some chipotle powder with s&p and olive oil. BBQ sauce is good also when broiling or baking. Lemon or lime with herbs is good. Teriyaki is good too. I like doing things different, like marinate in pomegranite or mango juice, and serve with a salty side dish. I've used stout beer as a marinade when grilling outside before..... mmmmm beer! Good Luck!

We just use a simple "marinade":

EVOO, dill weed, garlic/pepper combo; moderately

This merely enhances it but the wonderful salmon flavor still prevails whether grilled, roasted or baked.

Try using Italian salad dressing. Not the creamy stuff. Kroger has on sale for $1 a bottle all the time. It's also great to marinade chicken.

While I am sure there are hundreds of ways, I simply rub them with EVOO (extra virgin olive oil), sprinkle a little salt and pepper, them lay them on aluminum foil with some lemon and onion pieces to grill until they are flaky. You can also sprinkle some of your favorite herbs also (please use fresh for a better taste).
