Chip tricks can help to intimidate newer players at your table, but the drawback to them is that they also identify you as someone to keep an eye on because you obviously would be someone that plays a lot.
I never do them at the casinos because I like to give away as little information about myself as possible. When I'm playing with friends that already know I play all the time though, I'll do them to keep myself busy while people are shuffling. (When hands are going on though, even if you folded, it's best to pay attention to what's happening at the table instead of your chips.)

Absolutely nothing. I'd prefer to have people think I'm a fish at first, anyway. Sometimes, in that vein, I'll even fumble my stack and feign nervousness a bit, especially if its a table of people I don't know.

When you play for hours each day those "trick" keep you busy, personally I do it, without thinking about it. Actually all those trick make me focus, thinking during the hand.
The other thing is, it show your opponents that you have experience at the table (it's not your first time)....but whatever.
