Wrap it in foil, and DO NOT refrigerate it. Banana bread is like a cake, in that it will dry out quickly. Leave it on the counter, or store it in your COLD oven. If you're not going to eat it very soon, wrap it in foil, then in a zipper baggie, and freeze it. It will stay fresh, and taste just as good as when you baked it, either way.

While they are specialty items, you can find (on the internet easier) large containers that you can vacuum seal for large items like a loaf of homemade bread or such. They keep (homemade) bread fresh for up to two weeks, so I would have to assume they would do the same for homemade banana bread for at least a week or so. Oh, and by the way ~~~ I do love banana bread - it never would last a week here! Good luck!

You can make Banana Nut Bread French Toast:
Melt butter in a large skillet over medium heat. Slice banana bread into 4 thick slices. Dip each slice into the egg mixture, then place in the hot pan. Cook on each side until golden brown. Dust with confectioners' sugar just before serving, if desired.

My trick is to leave out 1/2 banana, and to substitute an equivalent amount of Miracle Whip salad dressing. REALLY!
Makes it way moist, almost too moist to eat the first day, but delicious thereafter.
I discovered this one day when I was one banana short of a recipe, and desperately looked around my refrigerator for something of the right consistency to substitute.
The Miracle Whip worked, but subbing it for a whole banana didn't leave enough banana flavor for me.

i do this a lot around xmas time since i bake about 30 loaves of bread to give away to friends and family. wait until it has cooled completely, then wrap tightly in plastic wrap twice (make the seams on different ends of the bread) and then wrap it in aluminium foil and keep it cold (or frozen if you want to keep it for a longer time). i work in restaurants and the number one enemy of any baked product is air...keep the air out and keep your food longer.
