Easy Beef stroganoff:

Very easy recipe. My kids even love this.

45 min 10 min prep
6 servings

2 sirloin steaks, cut into strips
1 tablespoon flour
1 can beef consomme soup
1 tablespoon butter
1 package fresh mushrooms
1 small onion
1 (8 ounce) container sour cream (light is ok)
1 package wide egg noodles

1. Brown steak strips.
2. Sprinkle with flour to coat the meat.
3. Slowly add soup to make a gravy.
4. In a seperate pan saute onions until clear.
5. Add mushrooms to onions and cook until wilted.
6. Add mushrooms and onions to beef and gravy.
7. Simmer 15 minutes or so to let thicken slightly.
8. Stir in sour cream 5 minutes before serving.
9. Heat through, do not boil.
10. Serve over hot noodles.

Meat sauce for pasta. Heat some olive oil in fry pan - add chopped onion and garlic - stir alot and cook for about 5 min. Add chopped green pepper and ground beef - brown the beef. Drain the beef and veggies - add a can or 2 of tomato puree or plain tomato sauce. Add pepper and basil to taste. Heat through - serve over favorite pasta. Oh - add a little red wine with the sauce too if you like.

This is a stroganoff recipe made with meatballs instead of chunks of ground beef but you can change that part. This is very good, It's my aunts recipe and one of my favorites.

Meatballs & Sour Cream

1 lb ground beef
1 tsp garlic salt
dash pepper
1 cup water
1 package lipton onion soup mix
1 - 8 oz carton sour cream
1 package wide egg noodles (cooked according to package directions), drained
1 tbs butter (add to cooked noodles)

Add salt and pepper to ground beef, mix well. Form ground beef into 1-1 ½ inch wide meatballs. Brown in skillet. Pour off grease. Add soup mix and water. Cook 20 minutes, stirring occasionally. Turn off heat and add sour cream. Serve over noodles.

This is a regular recipe at my house that the entire family enjoys! It's so easy to make it's called Easy Beef Stroganoff!

Easy Beef Stroganoff

INGREDIENTS
1 (12 ounce) package egg noodles, cooked and drained
6 ounces fresh mushrooms, sliced
1 onion, chopped
1/4 cup butter
2 pounds lean ground beef
4 tablespoons all-purpose flour
2 cups beef broth
1 cup sour cream
salt and black pepper to taste
DIRECTIONS
Bring a large pot of water to a boil. Cook egg noodles in boiling water until done, about 8 minutes. Drain.
Meanwhile, prepare the sauce. In a large skillet, cook mushrooms and onions in 2 tablespoons of butter over medium heat until soft; remove from pan.
Using the same pan, melt remaining butter. Cook ground beef in melted butter until browned. Mix in flour. Stir in beef broth, and cook until slightly thickened. Add mushroom and onion mixture; stir in sour cream. Season to taste with salt and pepper. Continue cooking until sauce is hot, but not boiling. Serve sauce over egg noodles.

I ran accross this recipe decades ago and it remains one of my families favorites -- even my sons wives love it.

Take a pound of bacon and cut into 1/2" slices -- cook till done, but not crunchy. Remove cooked bits and set aside.
Take a large onion, chop and cook till clear - IN the bacon grease.
Add 1 lbs of good ground beef to the same pot as the onions and cook till meat is done, but not too browned.
Drain any excess grease off.
Add bacon bits back into pan with the onion & beef. Salt & Pepper to taste.
Add one can of cream of mushroom soup and an 8oz container of sour cream.

Serve over buttered wide egg noodles.

I NEVER have left overs -- my boys all but lick the pot clean.

I got the following recipe off of kraftfoods.com and my hubby and I love it and it's so simple.

1-1/4 lb. beef flank steak, cut across the grain into thin slices
1 medium onion, sliced
1-1/2 cups water
3 cups egg noodles, uncooked
1/2 lb. (8oz) Velveeta pasteurized cheese product, cut up
1 pkg (10oz) frozen green beans
1 can condensed cream of mushroom soup
1/2 tsp. black pepper

Spray large skillet with cooking spray. Add steak and onions; cook and stir on medium high heat for 4 minutes or until steak is no longer pink. Stir in water. Bring to boil. Add noodles; return to boil. Reduce heat to medium-low; cook 7 minutes or until noodles are tender, stirring frequently. Add remaining ingredients; stir. Cook until Velveeta is completely melted and mixture is well blended.

Yum. Definitely try this one, it's good.

Any type of cubed, boneless beef works. Sirloin or diced New York strip Cook tender much faster. A cheap roast, cubed and put in a crock pot comes out very tender also.

Brown the meat, add cream of mushroom soup. Simmer until the meat is tender. You can let it go all day in a crock pot. Serve over egg noodles.
Add garlic, onion, fresh mushrooms, Worcestershire sauce, salt, pepper or whatever as your tastes dictate.

Despite its elegant appearance, this is an easy, surefire recipe. Just be sure to lay the fillets smooth-side up so they will roll easily.

1/4 cup plain dry bread crumbs
1/4 cup grated Parmesan cheese
2 tbsp chopped parsley
2 tbsp raisins or currants
1/2 tsp dried oregano
1/2 tsp grated lemon zest
1/4 tsp each salt and pepper
4 sole fillets (6 ounces each)
2 tsp lemon juice
2 tsp olive oil

1. Preheat the oven to 400 deg F. In a small bowl, combine the bread crumbs, Parmesan, parsly, raisins, oregano, lemon zest, salt, and pepper.
2. Place the fish, smooth-side up, on a work surface. Sprinkle the mixture over the fish and roll up from one short end. Place the rolls seam-side down in a 9-inch square glass baking dish. Drizzle the lemon juice and oil over the fish
3. Bake, uncovered, for 10 minutes or until the fish is just cooked through and the filling is piping hot. Serves 4.

3/4 cup sour cream
1 teaspoon salt

add cubed beef to pan saute in butter and oil until browned; add enough water to come about 1/2 inch above meat.
add onion and boil gently for about 1 1/2 hours.
when meat is very tender pour off excess water.
add 2 cans of soup and stir in the milk a little at a time to stir out lumps.
add all other ingredients except for the rice and heat, stirring frequently.
You can also add beef boullion to the rice as it is cooking.

1 1/2 pounds beef tenderloin fillet
Salt and pepper
3 tablespoons butter, divided
2 tablespoons all-purpose flour
2 cups beef consomme, available on soup aisle
2 teaspoons prepared Dijon style mustard
1/4 cup sour cream, eyeball it
1 tablespoon extra-virgin olive oil or vegetable oil
1/2 small onion, sliced
1/3 cup coarsely chopped cornichons
1 pound extra wide egg noodles, cooked to package directions
Chopped parsley leaves, garnish
Thickly sliced pumpernickel bread, optional

Slice meat into 1/2-thick by 2 -nch long very thin strips and season with salt and pepper. Set in freezer.
Heat a skillet over medium heat. Melt 2 tablespoons butter and cook with flour 1 minute. Whisk in consomme. Thicken 1 minute. Stir in mustard and sour cream, thicken 2 to 3 minutes. Remove from heat and season sauce with salt and pepper.

Heat a second skillet over high heat. Add 1 tablespoon oil and 1 tablespoon butter, then add the meat and onion and cook over high heat until brown on both sides, 3 to 4 minutes total. Then add the chopped cornichons and stir to combine.

Arrange meat on a bed of egg noodles and top with Stroganoff sauce and parsley. Serve with thickly sliced pumpernickel bread.

Very easy and my favorite--Brown your meat(hamburger or steak strips in a skillet-drain the grease-add 1 can of cream of mushroom soup and 1 can of cream of chicken soup and 1 cup of sour cream--heat till hot and pour over cooked rice( or noodles if you prefer)
