I mistakenly left a new large block of extra sharp Cheddar cheese out on the counter all night long. My house temp is about 68-70 degrees f. Is this cheese no longer fit for human consumption, should I toss it... or can I still use it?

From the Mayo Clinic:
"Wrap cheese tightly after using a portion to prevent mold from growing. If you find mold on hard cheese, cut off and discard about one-half to one inch on all sides of the mold. Then, enclose the cheese in a new wrapper or bag. If there is an extensive amount of mold, throw the whole block of cheese away. If soft cheeses such as brie, cream cheese or cottage cheese become moldy, discard the entire container."

I think it is fine. Years ago I was told that cheese never goes bad. As long as you can cut the mold off of it and still have some left ,it is still good. Not sure this is true (maybe I should ask that of everyone!), but I have always done just that and I've never gotten sick or had a problem.

My gosh, such overreaction! They make extra-sharp cheese that way, It's left at near room temperature and aged (with mold) for months! Your cheese will be fine. Refridgerate it again, if it molds in a few days, just trim away the mold and enjoy it.

I think it will be fine. Most people in England leave their butter and cheese out of the fridge with no problems. Maybe put it in the freezer for a few minutes then refrigerate it. If it still smells good, it would be fine I think

Even with that "nasty sheen" it should be fine. You may have shortened the shelf life, but you'll be fine. that sheen is just a separation of milk fats and solids. If it develops a spot of mold; cut one inch beyond it and munch away. That is what the FDA says is OK.

that was unfortunate, but you do not need to toss it.
If you feel that you should not eat any of if it the way it is, then grate the block, put in a sealed bag, and put it in the freezer. it can then be used in soups, or Quasedillas, or on top of a home made chili.

It should be okay. Cheese is aged at a warmer temp than you would expect, and is okay if left at room temp all day. It'll be fine.

It's really up to you.

You can if your unsure or if you have a child. If your going to cook with it you will be fine, if there is no mold on it, your in the clear.

BUT:

when in doubt throw it out.

i do stuff like that ALL THE TIME!! throw it in the fridge ASAP and go ahead and use it. as long as it was covered then you're fine. if it has a funky odor or it is crusty, then toss it.

Toss it it's a Dairy product..Trust me you don't want food poisoning.Been there done that..Thought I was gonna die..I wouldn't take a chance...
