Roast it with plenty of salt and pepper and a little olive oil - about 20 mins at 180c will turn it out perfect

Butternut Squash SOUP
Cooking time 10 to 30 mins







Ingredients
½ butternut squash
½ onion, sliced
1 clove garlic, chopped
2 tbsp olive oil
290ml/10fl oz water, boiling
1 chicken stock cube
1 tbsp Greek yoghurt



Method
1. Peel the butternut squash and remove the seeds.
2. Dice the squash and sauté in the oil with the onion and garlic for 3-4 minutes.
3. Add the water and stock cube and simmer for 10-12 minutes until the squash is tender.
4. Blend the soup in a food blender.
5. Season if needed and serve with a dollop of Greek yoghurt.

The first vegetable garden I ever had was a disaster and all I ended up with was hundreds and hundreds of squash (despite the fact I had planted carrots, beans, lettuce, strawberries, etc!) I had to get very creative with my abundance of squash. The best thing that I did with them was make squash bread. Find any zucchini bread recipe and substitute the squash for the zucchini. The great thing about this is that you can freeze the loaves of bread and thaw them out as you want them. Try adding variations such as walnuts, pecans, raisins, chopped dried apricots, shredded carrot, chocolate chips, lemon zest, etc.

I do a roast root vegetable medley: -
Preheat some olive oil in a baking tray (210/gas mark 8), then put parboiled potatoes (about 4cm cubes) in for 10min, followed by whole shallots/baby onions (5min), baby beetroots (halved), butternut squash (2cm cubes, 10 min later) and whole garlic cloves last. Takes about 1 hour - 1 hour 15 mins in all to cook, until the veg are crispy on the outside. Use a large baking tray, use the top oven shelf and add some honey halfway through if you like - and chopped chillies for a bit of spice. Yummy!

Shrimp and squash penne is one and the other I made last night, Zucchini with Green Chiles and warmed corn tortillas - unbelievably filling!

it's wonderful peeled and cubed. Place in a roasting tin with lots of olive oil sprinkle with ground cumin, coriander and tumeric to taste, add salt and pepper, Cook on medium hot oven until soft turning a couple of times to ensure all the squash is well coated.An option is also to add a large spoon full of demerara suger to the coating for a more caramalised finish... have fun

Like, pumpkin, butternut, danish ?
You can make soups, very nice casseroles, you can stuff it and you can even make a delicious icecream, and you can bake a pie.
There are tons of recipies on the Internet. There are tons of just Squash cook books.

Slice into 3/4 inch pieces. Sautee in chicken broth with salt and lots of garlic powder until they soften. Takes about 10-15 minutes. (give or take)
