i looking for a realy good hamburger recipe in the mother county of hambugers. in germany where i come from i didnt find some good stuff.

Ground beef, a grated apple and a packet of lipton onion soup mix. Put it on the grill and that's the best burger you can taste anywhere! (The apple makes it stay really moist on the grill, and the apple flesh really soaks up the smoke flavor)

The Best Hamburger Recipes
I suppose it's about time to let the family secret out of the bag so others may enjoy the juiciest, most delicious hamburgers ever created by humankind. Come on in and taste pure hamburger heaven.

Are you ready to build the most scrumptious, delicious hamburgers you've ever had before in your life? Are you just looking for a new way to make a burger? Something a little more creative? Well, you're in luck because I'm about to show you how to design your own burger that suits your own specific taste. Follow along, it's real easy to do.

NOTE: This recipe IS meant to be tinkered with!



Basic Ingredients:

Any amount of Ground beef (I prefer 80/20)
Breadcrumbs
1 egg

Then gather whatever else you want to put in it.
I want this particular batch to be spicy and sweet so I will also be adding:

Worcestershire Sauce
Tabasco Sauce
Crushed Red Pepper

You can put almost anything into a burger, from peanut butter to fresh salsa to cheese. Experiment! What do you usually add TO your burger? Throw in some diced onions, peppers, even ketchup!



STEP 1 - Wash your hands and your countertop and plop a brick of your favorite thawed ground meat down on it. (Ground beef is being used above)



STEP 2 - Flatten and spread the ground hamburger meat so there is more surface area exposed.



STEP 3 - Add the egg along with whatever other ingredients you will be using. In the above picture I have added the egg, Tabasco sauce, worcestershire sauce, and a generous amount of crushed red pepper. No bread crumbs yet.



STEP 4 - Begin mixing all of the ingredients into the meat by folding the hamburger meat over itself and working it together with your hands. Fold and press.



STEP 5 - Continue kneading the hamburger meat mixture until you are satisfied that the ingredients are evenly distributed.



STEP 6 - Flatten the hamburger meat mixture against the counter once again.




STEP 7 - Lightly cover the top of the hamburger meat mixture with breadcrumbs and then mix it into the meat in the same way that you just did the other ingredients. The amount of breadcrumbs will vary from batch to batch depending on the amount of liquid ingredients you add. The idea here is to get the meat to a consistency where it holds together really well but is not overly wet or dry. When you can work a piece into a tight ball and plop it down on the counter without it deforming too much or breaking then you've got the right mix.



STEP 8 - Work the hamburger meat mixture into a symmetrical 'ball'.




STEP 9 - Split the ball up into equal sized portions. These will be your patties so decide how big you want your burgers to be. You can do this by hand or with a large knife. I find the knife is easier to get a good separation with.



STEP 10 - Take each hamburger meat portion and work it into a tight ball. Cup the meat between your hands and squeeze it as hard as you can to pack it together tightly.



STEP 11 - Once you have a tight ball of meat in your hand, slowly work it between your palms into a flat, patty shape. If the edges start to split, use the crease in the center of the palm of your hand to 'pinch' and work them back together. I always make more than I am planning on immediately cooking, so the extra hamburgers can fit between sheets of wax paper and then into a freezer bag to be frozen for later.









STEP 12 - Cook up some of these burgers using your favorite method, and serve on a toasted bun with the condiments of your choice. Mmmmmmm. I generally either use my trusty George Foreman or the outside BBQ.

Tex-Mex Burger with Cajun Mayo

makes 4 burgers

INGREDIENTS
1/2 cup mayonnaise
1 teaspoon Cajun seasoning
1 1/3 pounds ground beef sirloin
1 jalapeno pepper, seeded and chopped
1/2 cup diced white onion
1 clove garlic, minced
1 tablespoon Cajun seasoning
1 teaspoon Worcestershire sauce
4 slices pepperjack cheese
4 hamburger buns, split
4 leaves lettuce
4 slices tomato
DIRECTIONS
Preheat grill for medium-high heat. In a small bowl, mix together the mayonnaise and 1 teaspoon of Cajun seasoning. Set aside.
In a large bowl, mix together the ground sirloin, jalapeno pepper, onion, garlic, 1 tablespoon Cajun seasoning, and Worcestershire sauce using your hands. Divide into 4 balls, and flatten into patties.
Lightly oil the grilling surface, and place the patties on the grill. Cook for about 5 minutes per side, or until well done. During the last 2 minutes, lay a slice of cheese on top of each patty. Spread the seasoned mayonnaise onto the insides of the buns. Put burgers in the buns, and top with lettuce and tomato to serve.

BEST EVER CHEESEBURGER

ground sirloin (or your choice of ground beef)minced onions
A1 Steak Sauce
Worcestershire sauce
water

Put the ground beef in a large mixing bowl. Pour A1 sauce over the beef, usually 1/4 to 1/2 of a 10 ounce bottle.
Add the minced onion- just sprinkle a good bit over the meat. Then use your hand to "knead" it all together.

Once it's mixed well, make your hamburger patties to your desired size. Put a dash of Worcestershire sauce and water in the skillet and saute until the meat is done.

or

ALL-AMERICAN CHEESEBURGERS

1 lb. ground beef
1 tsp. salt
1/8 tsp. pepper
2 tsp. catsup
8 slices American cheese
8 slices tomatoes
8 slices Bermuda onion
4 slices green pepper
4 slices crisp, cooked bacon
4 split hamburger buns, toasted & buttered

Mix ground beef lightly with salt and pepper. Shape into 4 patties about 1" thick. Pan fry over medium heat 8 minutes on each side for medium, or until meat is done as you like it. Brush tops lightly with catsup, cover each hamburger with a cheese slice. (Heat from heat will melt cheese.) Top each with a tomato and onion slice. Put together sandwich style on buttered buns which have first been topped with one slice each of green pepper, onion, tomato and cheese. Top each cheeseburger with crisp slice of bacon.

Best to start with good beef. Have a butcher grind it fresh and use top sirloin. Next chop up some garlic and onions. Mix with meat. Add some Worcestershire sauce and a small amount of water. Grill. By using better meat you do not have to over cook it and with the small amount of water it stays very moist. I also often add blue cheese in the middle.

take a few pounds of chuck, add in 2 eggs 2-3 pkgs of lipton onion mushroom soup, (depends on how srong you want the onion taste to be and dsodium content) 2 eggs a 3-4 slices of bread broken up and soaked in milk. mix it up good broil or grill, top with fave cheese slice ( to make it a cheese burger) yum good chit mon and if you want you can actually have it taste almost the same by omitting the Lipton soup mix and grating a bout 4 good size onions into the mixture instead (i mean grate real fine. if you want you can add some fave BBQ sauce to the mixture, my kids love it with the BBQ sauce added (this also makes a great meat loaf ) (now I am REALLY hungry i haven't even had my breakfast yet)

1 pound of ground chicken
1 1/2 tbls spoons of jerk seasoning

Mix it well .. form your patties and grill ... top it with a mango salsa that's made from one diced ripe mango, 1 minced jalapeno pepper (use less if you don't want too much heat) 1/2 small red onion diced, 1/2 can black beans, drain and rinsed, the juice of one lime and salt and pepper to taste. Mix it well and let marinate for at least an hour at room temperature or overnight in the fridge.

Toast a kaiser roll, put your burger, lettuce, tomato and salsa on top and enjoy!

MEXICAN HAMBURGERS (CHULETAS)
Salsa Fria:
1 10 oz can diced tomatoes with green chiles
1 tablespoon olive oil
1 tablespoon wine vinegar
Chuletas:
2 cups Saltines, finely crushed
3 tablespoons fresh parsley, chopped
1 cup Vidalia onions, chopped
1/2 tsp garlic powder (not salt)
1 lb ground chuck (beef)
1 egg
1 tsp salt
1 tsp chili powder
1 cup oil (for frying)
Garnish:
Rings of red onion, slices of avocado, sour cream and sprigs of cilantro
Combine all Salsa Fria ingredients. Refrigerate for at least one hour.
On a sheet of wax paper, evenly spread cracker crumbs. Combine parsley, onions, ground meat, garlic powder, egg, chili powder and salt in a small bowl. Form 4 patties and coat each pattie with the cracker crumbs evenly. Cover and refrigerate for at least 1 hour (but no more than 3 hours) to thoroughly chill.

Heat oil until it is hot enough to brown a 1 inch cube of bread in a little over 1 minute. (Don't get oil too hot or center of patties won't cook through). Fry patties in oil well browned on outside and cooked through. Drain on paper towels.

Serve on a bed of iceberg lettuce with a few rings of red onion, topped with Salsa Fria and with a dollop of sour cream with a sprig of cilantro to the side and a slice of avocado.

Sweet & Sour Meatballs

1 lb ground beef
1 tsp garlic salt
dash pepper
1 sml can pineapple (optional)
1 can or jar sweet & sour sauce (I like the Contadena brand, but any will work)

Combine first 3 ingredients. Make into meatballs, 1 to 1 ½ inch wide. Place in shallow casserole dish and bake in 350 F oven, for 20 minutes. Drain of grease. Bake for 10 more minutes. Drain again. Pour sauce over meatballs and bake for 15 minutes. Serve over rice. Makes 2-4 servings.



Meatballs & Sour Cream

1 lb ground beef
1 tsp garlic salt
dash pepper
1 cup water
1 package lipton onion soup mix
1 - 8 oz carton sour cream
1 package wide egg noodles (cooked according to package directions), drained
1 tbs butter (add to cooked noodles)

Add salt and pepper to ground beef, mix well. Form ground beef into 1-1 ½ inch wide meatballs. Brown in skillet. Pour off grease. Add soup mix and water. Cook 20 minutes, stirring occasionally. Turn off heat and add sour cream. Serve over noodles.



Stuffed Bell Peppers

3 bell peppers, halved and blanched
4 slices bacon
1 cup chopped onion
1 lb ground beef
½ tsp garlic salt
½ tsp paprika
2 cups cooked rice
½ cup catsup
½ cup spaghetti sauce

Saute bacon, add onion, add ground beef and brown. Stir in remaining ingredients. Place peppers in a shallow casserole dish. Fill bell peppers, cover and bake at 350 F for 40 minutes. Remove cover ant top with spaghetti sauce, bake for 10 minutes longer, uncovered.


Porcupine Balls

1 egg
½ cup water
1 envelope lipton onion soup mix
1 ½ lbs lean ground beef
½ - ¾ cup uncooked minute rice
1 – 46 oz bottle of Campbell Tomato Juice
1 tsp sugar

Beat egg slightly with water and 2 tbs soup mix. Mix lightly with beef and ¼ cup of rice. Shape into large meatballs (1 ½ to 2 inches). Roll in remaining rice, pressing it lightly into the meatball. Use more rice if needed.

Heat tomato juice to boiling. Stir in remaining onion soup mix and sugar. Place meatballs in sauce and cover. Simmer, stirring several times for 50 minutes



Moms Sweet & Sour Meatloaf

Sauce:
2 small cans tomato sauce
1/4 cup worchestershire sauce
1/2 onion chopped
1 tablespoon dried parsley
1/2 cup brown sugar

Mix all sauce ingredients together in bowl, set aside.

Ingredients (Meatloaf):
2 pounds ground beef
1/2 chopped onion
1 egg, beaten
1/2 cup or more if needed, quick oatmeal (not instant)
1 teaspoon garlic salt

In another bowl add ground beef, 1/2 chopped onion, egg, oatmeal, garlic salt, pepper, and 1/3 of the sauce mixture. Mix together well.

Place in pan, making space between meat and pan around edges with fingers. Flatten top, spread more sauce over top and cook 1 hour, at 350F. Drain off grease half way (30 min) and add more sauce. Reserve some sauce for adding when served. The oatmeal disappears, is healthy and you can't taste it. It just holds it together better. Add more if you need it.
