Simmer and stand is my command......... no seriously (being a Chef) long slow simmering infuses all the flavours and a resting period helps to combine the dish..... bon-appetite

As a matter of fact a bolognese and a casserole can simmer for several hours and taste better the day after they are made.
Meat reabsorbs liquid from the sauce, making it more tender. This reabsorbtion is repeated each time they are reheated.
Some evaporation occurs concentrating the sauce's flavors. With each reheating further evaporation occurs.
Browning of the stock/sauce during each reheating also enhances the flavors. The sauce sticks to the sides of the pot as it gets hot, when stirred the browned bits fall back into the sauce to give it more flavor.

With chili it is best to let it stand / simmer for as long as possible. This allows the flavours to develop. I suppose it works the same for other dishes.

whenever I reheat any I have made left over the next day it tastes so much more flavoured. Particularly if it has red wine in it. I would serve straight away though if I had just cooked it, if I was being posh for a dinner party or something I'd make it and reheat the next day to get the flavour.

It is always best (unless you are in a hurry) to let these dishes simmer in order to blend flavors. Anytype of soup, chowder, chili or sauce (spagetti) is always better if you refrigerate it overnight after cooking. This allows the flavors (spices) to blend.

Better to simmer so flavors will blend, chili is better the next day if you can wait that long.
