3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cup of flour
No need for a mixer for this recipe. Preheat the oven to 350°F. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

Banana Walnut Bread From Food Network Kitchens
1 1/4 cups unbleached all-purpose flour
1 teaspoon baking soda
1/2 teaspoon fine salt
2 large eggs, at room temperature
1/2 teaspoon vanilla extract
1/2 cup unsalted butter, at room temperature, plus more for preparing the pan
1 cup sugar
3 very ripe bananas, peeled, and mashed with a fork (about 1 cup)
1/2 cup toasted walnut pieces
Sift the flour, baking soda, and salt into a medium bowl, set aside. Whisk the eggs and vanilla together in a liquid measuring cup with a spout, set aside. Lightly brush a 9 by 5 by 3-inch loaf pan with butter. Preheat the oven to 350 degrees F.
In a standing mixer fitted with the paddle attachment or with an electric hand-held mixer, cream the butter and sugar until light and fluffy. Gradually pour the egg mixture into the butter while mixing until incorporated. Add the bananas (the mixture will appear to be curdled, so don't worry), and remove the bowl from the mixer.
With a rubber spatula, mix in the flour mixture until just incorporated. Fold in the nuts and transfer the batter to the prepared pan. Bake for 55 minutes or until a toothpick inserted into the center of the bread comes out clean. Cool the bread in the pan on a wire rack for 5 minutes. Turn the bread out of the pan and let cool completely on the rack. Wrap in plastic wrap. The banana bread is best if served the next day.

Banana Tea Bread
225 g (8 oz) Be-Ro Self Raising Flour
1 x 1.25 ml (¼ tsp) spoon bicarbonate of soda
pinch salt
75 g (3 oz) butter
175 g (6 oz) caster sugar
2 medium eggs, beaten
450 g (1 lb) bananas weighed with skin, peeled, mashed
100 g (4 oz) walnuts, chopped
1 Heat oven to 180ºC, 350ºF, Gas Mark 4. Grease and line the base of a 1 kg (2 lb.) loaf tin.
2 Mix together flour, bicarbonate of soda and salt.
3 Cream the butter and sugar until pale and fluffy, add the eggs a little at a time alternately with the flour.
4 Stir in the remaining flour, bananas and walnuts and place in prepared tin. Bake for about 1¼ hours.
5 Cool on a wire rack.

Ingredients
100g sultanas
75ml bourbon or dark rum (I use brandy)
175g plain flour
2teasp baking powder
1/2 teasp bicarbonate soda
1/2 teasp salt
125g unsalted butter, melted
150g sugar
2 large eggs
4 bananas very ripe about 300g unskinned (Mashed)
60g chopped walnuts
1 teasp vanilla extract
9"x5"x3" Loaf tin buttered and lined on base.
Put the sultanas and brandy in a saucepan and bring to the boil. Remove from heat and leave for about an hour.
Preheat oven 170C/325F/Gas mark 3
Put flour baking pwdr, bicarb and salt in a bowl and combine well. In a large bowl mix melted butter and sugar and beat until blended. Beat in the eggs one at a time, then add the mashed bananas. Then with a wooden spoon stir in walnuts, sultanas and vanilla extract. Add the the flour mixture a third at a time, stiring well. Scrape into prepared tin and cook in the middle of the oven 1-11/2 hrs, when ready a skewer should come out clean.
Slice and spread with butter.

2 cups over-ripe mashed bananas

1 cup chopped nuts
1 tablespoon banana liqueur or dark rum
Preheat oven to 350F.
Combine flour, baking soda and salt; stir to mix well.
In the bowl of an electric mixer, beat together shortening, sugar, mashed bananas, and eggs. When well beaten, gradually add the flour mixture while mixture is at lowest speed. Mix only until combined.
Stir in the banana liqueur or rum and the chopped walnuts, pecans, hazelnuts or macadamia nuts.
Butter and flour a loaf pan. Bake for 65-70 minutes or until cake tests done (toothpick inserted in center comes out clean).
Remove from oven and allow to sit for several minutes. Run a bread knife around edges of loaf pan to free it from sides and remove from pan. Rub the top of the still-warm loaf with a pat of butter to soften and glaze the top, if desired.
Serve with whipped cream cheese spread on each slice.

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into centre of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack and bring some round to me.
