Do you mean make an apple pie today, or do like American Pie do an apple pie? If you are baking a pie, it will be fine still on Thursday, just cover it tightly, but you don't want too much moisture to get in or the crust will get soft and kind of gooey like on the bottom. I'm assuming you are taking about baking, so good luck!

If it were me I would wait until tomorrow night or Thursday, because if it is done earlier the crust will bedome soggy and the juices will run from the apples and the filling will be all watery.
