VEGETARIAN CHIMI CHANGAS

2 cloves garlic, chopped
10 medium mushrooms, sliced
1 large green pepper, sliced
1 medium-large onion, sliced
1 15 oz can black beans
1/2 cooked white or brown rice
1 cup mozzarella cheese, shredded
10" tortillas
cooking oil
garlic powder
black pepper
crushed red pepper
onion salt

In a frying pan saute garlic cloves, mushrooms, green peppers, onions until soft but still slightly crisp. In a bowl mix cooked rice, black beans together. In another pan heat about 1/2" inch of cooking oil. Warm the 10" tortillas in the microwave until soft. Place a 1-2 large spoonfuls of rice and beans, top with a large spoon of vegetables, and sprinkle with mozarella cheese. Season to taste with garlic powder, onion salt, crushed red pepper, and black pepper. Fold in the edges tightly, and place folded edges down in hot oil. Brown each side until golden brown. serve on a bed of lettuce and tomatoes topped with guacamole, sour cream and salsa. Very tasty!!

STUFFED PEPPERS VEGETARIAN

6 med. green peppers
2 c. cooked rice
1 lg. egg, slightly beaten or 1/4 c. Eggbeaters
1 c. chopped onion
1 sm. can tomatoes or 1 (10 oz.) can Rotel tomatoes
1 tbsp. vegetable oil
1 c. bread crumbs or wheat germ
1 1/4 c. grated Cheddar cheese

Cut off tops of peppers and remove and discard seeds. Dice tops, discarding stems, and mix all ingredients, reserving 1/2 cup cheese. Stuff peppers and place in a round microwave casserole. Put extra filling around peppers. Peppers should fit tightly. Cover with plastic wrap, piercing 4-5 times for vents. Microwave on High 15 minutes. Sprinkle with reserved cheese. Cover; let stand 2-3 minutes. Then serve. This dish can be made ahead and frozen for later use. Do not cook until after thawed.

VEGETARIAN BLT

Mozzarella cheese, sliced 1/4 inch thick
Tomato, sliced
Lettuce
Yogurt
Salt and pepper to taste
Bread

Preheat a skillet or griddle, fry the Mozzarella slices until brown. This will look messy and will only be able to be flipped after browned. When cheese is golden brown remove and use as if the browned cheese were bacon. Place all ingredients on bread and sink your teeth in.

VEGETARIAN BURRITOS WITH BLACK BEANS
AND AVOCADO

4 flour tortillas (6 to 7 inches in diameter)
1 c. cooked brown or white rice
1/2 c. canned black beans, rinsed and drained
1/4 c. canned diced green chiles
1/4 c. canned whole kernel corn
2 tbsp. thinly sliced scallions
2 tbsp. chopped cilantro or parsley
1/4 tsp. salt
1/4 tsp. freshly ground black pepper
1 med. avocado, diced
1/2 c. shredded reduced-fat Cheddar or Monterey Jack cheese (2 oz.)
1 c. shredded lettuce
1/2 c. bottled salsa

1. Preheat the oven to 350 degrees. Wrap the flour tortillas in aluminum foil and warm in the oven for 5 to 10 minutes until heated through.
2. Meanwhile, in a large bowl, combine the rice, beans, green chiles, corn, scallions, cilantro, salt and pepper. Toss to mix.

3. Divide the rice and bean salad evenly among the warm tortillas. Top each with 1/4 of the diced avocado, 2 tablespoons cheese, 1/4 cup shredded lettuce and 1 tablespoon salsa. Roll up and eat. 4 servings.

VEGETARIAN MUSHROOM PASTA

2 tbsp. olive oil
1 lb. fresh mushrooms, halved
3 cloves garlic, minced
2/3 c. white wine
2 lg. tomatoes, cut into 3/4 inch chunks
3/4 c. green onions, sliced
1/2 c. Italian parsley or basil leaves, packed
Salt & cracked black pepper
8 oz. penne, orecchiette, rotelle or spaghetti pasta, cooked as directed on pkg.

Heat oil in large skillet over medium-high heat, saute mushrooms and garlic, tossing occasionally, 4 minutes. Add wine, bring to boil and reduce wine by half. Stir in tomatoes, onions and herbs, heat just until hot. Remove from heat. Season with salt and pepper. Serve over hot pasta. Sprinkle with cheese if desired. Makes about 4 servings.

Crockpot Chicken Stroganoff

Ingredients

(4 servings)

6 Boneless Chicken Breasts
16 oz Sour cream
1 cn Cream of Mushroom soup
1 pk Onion Soup mix, Lipton's


Instructions

Mix all together and put into crockpot. Cook on low for 4 -6 hours. Or until chicken is tender. Serve over cooked noodles or rice.

Have some cheese raviolis with sauce on them and garlic bread. That's what I had last night and it was delicious. I buy the frozen ravoli and it just takes 4 min to boil them. Heat up the sauce and garlic bread. Makes a quick and easy dinner!

Im having cold crepes with boiled rice and raw salmon filling splashed with soy sauce. It's really nice but your other half is a veggie so never mind.

I love vegetarian lasagna. it is very easy to make, all you have to do is cut up vegetables, and i like to heat them up in the sauce before you put them with the noodles and cheese. use the no boil noodles for an easier recipie, and then just bake that

Grill some steak for yourself and some portabellas for her! Add some brocolli (with cheese for you) and some baked potatoes. Dessert can be a light strawberry shortcake

we are having catfish nuggets. depends on what you have in your ice-box, freezer, cabinets. go to Kraftfoods.com and put in some ingredients and they will come up with a perfect dish for you.
