When should you add fresh veggies so they don't turn to mush?

Veggies can lose their nutrients when cooked but the nutrients don't just disappear. They dissolve in the water you cook the veggies in. That's why steaming is considered a healthier option. As long as you are not draining them after, all the nutrients remain (in the broth most likely).

Vegetables lose many of their nutrients once they are cooked in any way. Well, on second thought, lose is not the right term. The vitamin and mineral potency is reduced after cooking. There! That's what I meant to say.

Yes, they retain all the nutrients...If you don't want your vegs. mushy, add them last, although most recipes say to add them first, since they take the longest to cook
