The perfect book for you is The Compleat I Hate to Cook Book by Peg Bracken. Easy, good recipes that anyone can make. FUn writing as well.
You can get it hardcover or paperback and it's quite cheap on Amazon and Abebooks used. Everyone in my family has and uses this book and we often give it as a houswarming or wedding gift. Most of the recipes I know so well I can cook them from memory.
I recommended this to a noncooking friend who was trying to make a meal for the man she was falling in love with, and she credits the Saturday Chicken with getting him to propose. It's simple, chicken parts seasoned with salt, pepper, garlic and paprika, baked with a sauce that is just a half pint carton of heavy cream and a can of mushroom soup. (You MUST use heavy cream!) Very simple and nearly fool proof and tastes like you went to a lot of trouble.

I have about 20 cookbooks, the one I always go back to is Southern Living Complete Cookbook. It has real food that is easy to cook and also some more "elegant" recipes. It also has menu planning for you and a substitution guideline. Like if you don't have whole milk, it gives you something you can replace it with so it doesn't alter the recipe.

I have the America's Test Kitchen Family Cookbook....I don't know where my daughter got it, I think Walmart maybe...It is almost step by step cooking, very easy and great recipes for anything....I also have Better Homes and Garden Cook Book, you can buy that almost anywhere....that is a great one as well....Hope this helps!!!

Several recipes from different countries; you will love it.
It is my second bible, even if my children are not satisfied with my results. You can get one used from $3.39 on books99.com
