It represents the five elements in harmony. Air, fire, water, earth, and spirit. It also has feminine associations, or so I've come to understand. Some numberology thing, I guess. Odd numbers are associated with the feminine. My understanding is far from the best, but I've heard it's the breasts plus the external genitals. So a woman has three, two breasts and one major genital extension, while a male has only two tesitcals. I'm not really sure about that one.
It's a symbol of wholeness.

It's a pagan symbol of protection and spiritual unity with the earth.

The five points represent the four elements, plus the human Spirit. The circle links all the points and unites them as a symbol of power. The idea is that with the Spirit united with the four points then there is no place for bad energies to enter.

Geometrically the Pentacle is interesting because it comes from a perfect Pentagon, with all sides and angles being equal, and connecting each point with the two furthest points from it. And doing this creates an perfect inverted pentagon in the centre of the star.

I'm not Wiccan, but from my reading, the pentagram was widely used as a protective charm.

It was thought that practitioners of magic would stand within the symbol when they tried to summon a spirit. The idea was that the spirit didn't want to be summoned and you needed the extra protection.

"In the science of magic the pentalpha is called the holy and Mysterious pentagram. ...the pentagram in the star of Magians; ...by virtue of the number five, it has great command over evil spirits because of its five double triangles and its five acute angles within and its five obtuse angles without, so that this interior pentangle contains in it many great mysteries." (Encyclopedia of Freemasonry, The pentagram or pentacle. It has five points and the number "5" has always been regarded as mystical and magical, yet essentially "human".
We have five fingers/toes on each limb extremity.
We commonly note five senses - sight, hearing, smell, touch and taste.
We perceive five stages or initiations in our lives - eg. birth, adolescence, coitus, parenthood and death.
In Christianity, five were the wounds of Christ on the cross.
There are five pillars of the Muslim faith and five daily times of prayer.
Five were the virtues of the medieval knight - generosity, courtesy, chastity, chivalry and piety as symbolised in the pentagram device of Sir Gawain.
The Wiccan Kiss is Fivefold - feet, knees, womb, breasts, lips - Blessed be.

A circle around a pentagram contains and protects.
The circle symbolises eternity and infinity, the cycles of life and nature.
The circled pentagram is the passive form implying spiritual containment of the magic circle, in keeping with the traditional secrecy of witchcraft, and the personal, individual nature of the pagan religious path, of its non-proselytising character.

The pentagram has five spiked wards and a womb shaped defensive, protective pentagon at the centre.
There are five elements, four of matter (earth, air, fire and water) and THE quintessential - spirit. These may be arrayed around the pentagrams points.
The word "quintessential" derives from this fifth element - the spirit.
Tracing a path around the pentagram, the elements are placed in order of density - spirit (or aether). fire, air, water, earth. Earth and fire are basal, fixed; air and water are free, flowing.
Single point upwards signifies the spirit ruling matter (mind ruling limbs); is a symbol of rightness. With two points up and one (spirit) downwards, subservient, the emphasis is on the carnal nature of Man.

A pentagram without a surrounding circle is the active form symbolising an outgoing of oneself, prepared for conflict, aware, active.

The earliest record of the pentacle symbol was found on an ancient cave drawing in France, dating back to the neolithic period.
This strange symbol appeared next to a drawing of the human anatomy, and theorists have noted that it appears directly next to the genitalia, leading to the belief that it in fact represents the anus.
The anus was worshipped in ancient times as it was thought to be a miracle that one could eat a bison's hoof, only for it to appear out of the other end of one's body.

When the uppermost point faces north it means that the spirit supercedes all earthly things (represented by the four elements: earth, fire, air and water as the four other points on the star).
