When mayonnaise is canned, it is almost sterile in that no pathogenic bacteria are in the jar when you get it. After the jar is opened, it is exposed to the outside world, so bacteria can get in and easily multiply at room temperature.

The same way every other food is preserved by canning. It removes all air to prevent bacterial growth. Most items are cooked and pressurized that way. Mayo is vacuum sealed. Once that seal is broken bacterial growth can begin.

It Has a vacuum seal where no air get s to the product. Once opened then has to be refrigerated to maintain freshness for time allotted.
