Grilled Skinless Chicken, Serve with a selection of your favourite Veggies or a Salad & Boiled new Potatoes
White Fish (Cod, Plaice, Haddock ect), place in some foil, add some Fresh Herbs (Tarragon, Chives Basil ect) of your choosing to the top of Fish, drizzle a small amount of Olive Oil on top add a slice of Lemon,wrap the foil over the fish,put on an oven proof dish, cook in medium hot oven for about 20-25 mins,Serve with either Salad, Veggies or a Crusty Bread Roll,

Hi - my husband has been on a diet now for about two years and each evening we struggle with healthy meals! Sometimes he falls off the wagon but we have changed from white rice and pasta to brown (and red rice too) - takes longer to cook but obviously better for us. He tries to keep fat low and also an evening meal to (ideally) below 600 calories but deffo under 800 calories. He eats lots of salads, quite often with tinned tuna (in water not oil) and diet salad dressings. He also enjoys Cesar salad with grilled chicken breasts too. We have lots of poached or steamed fish (fish cooked in tin foil parcels with slices of lemon and bay leaves is nice) and have that with steamed veg or salad with rice or potatoes. Chili is a great quick recipe and can be made with pork or turkey mince which is lower in fat that beef. You can also make low fat lasagna or spag bol. Mince is your friend - you can do lots of different meals with it. Pasta (but not too much) is also good and quick. Along with baked beans on toast - quick, easy and tasty. Buy some diet bread - thinner than normal bread and not as filling but supposedly it's good for you. We snack on fruit and veg and toasted pitta bread or bagels. If you're in the UK Ainsley Harriott has some good quick, easy and low fat recipes in some of his books. Good luck!

seared fresh tuna,served on a bed of cooked mixed peppers and sweetcorn.lovely.for dessert make up a sugar free jelly,when just setting,whisk in a fat free fruit yoghurt till foamy.when set this is a lovely mousse like consistency and only about 80cals for the whole lot.

Italian Beef and Lentil Slow Cooker Soup

1 small onion(s), chopped
1 medium garlic clove(s), minced
1 large zucchini, diced
1 pound lean beef round, cut into 1-inch chunks

5 oz dry lentils, about 3/4 cup
4 cup canned beef broth
1 tsp table salt

Place all ingredients, except basil, in a 5-quart or larger slow cooker. Stir well. Cook on LOW setting for 6 to 7 hours.

3 Tbsp soy sauce
1 medium orange(s), squeezed for juice
1 tsp dark brown sugar
2 tsp cornstarch
2 medium sweet red pepper(s), deseeded and thinly sliced
2 Tbsp vegetable oil
225 gm lean cooked beef rump roast, sliced into strips
225 gm broccoli, chopped into florets
1 cup scallion(s)
1 tsp table salt
1 tsp black pepper, freshly ground
2 Tbsp parsley, or fresh coriander (optional)
In a jug, mix together the soy sauce, orange juice, muscovado sugar and cornflour. Set to one side.
Heat the stir-fry oil or vegetable oil in a wok or large frying pan. Add the beef strips to the wok and stir-fry for 3 - 4 minutes, then add all the vegetables and stir-fry for another 4 - 5 minutes, until the vegetables are tender, yet still bright and crunchy.
Stir the cornflour mixture to blend the ingredients, then add to the wok and stir through. Cook, stirring often, for about 1 – 2 minutes, until the sauce thickens.
Season to taste, then pile the stir-fry onto warmed plates and serve at once, sprinkled with chopped fresh coriander or parsley, if using.

Sweet and Sour Chicken
1 medium onion, sliced
1 medium carrot, peeled, sliced
1 medium celery stalk, sliced
1 lb. boneless skinless chicken thighs, cut into bite-size pieces
1/2 cup KRAFT CATALINA Dressing
1/2 cup soy sauce
1/2 cup firmly packed brown sugar
1 tsp. grated gingerroot
1 can (8 oz.) pineapple chunks, drained, juice reserved
1 medium green pepper, sliced
1 medium red pepper, sliced
4-1/2 cups hot cooked MINUTE White Rice
PLACE onions, carrots and celery in slow cooker; top with chicken. ADD dressing, soy sauce, brown sugar, gingerroot and pineapple juice. Cover with lid. COOK on LOW for 7 to 8 hours (or on HIGH for 3-1/2 to 4 hours), adding pineapple and peppers for the last 30 min. of the cooking time. Serve over rice.
Broccoli Casserole
1 1/2 cups hot water
1 pkg (6oz) Stove Top Stuffing for Turkey
3 tbsp Butter
1 pkg frozen broccoli, thawed
1 can (10 3/4oz) condensed cheddar cheese soup
3/4 cup milk
Preheat oven 350 degrees. Mix hot water and butter in large bowl til butter is melted. Add stuffing mix; stir just until moistened. Set aside.
Put broccoli in a 2qt. casserole dish or 9x13 baking pan. Mix soup and milk until well blended; pour over broccoli. Top with stuffing. Bake for 30 mins or until heated through. Make 6 servings.
Chicken in Mushroom Gravy
4 boneless, skinless chicken breasts, cut in half
salt and pepper
1/4 cup dry white wine or chicken broth
1 10 3/4-oz. condensed cream of mushroom soup
1 4-oz. can sliced mushrooms, drained
Place chicken in slow cooker. Salt and pepper chicken to taste. Mix wine and soup and pour over chicken. Add mushrooms. Cover and cook on Low 7-9 hours (High 3-4 hours).Serve over noodles or rice.
GREEK SALAD
Kosher salt and freshly ground black pepper
4 tomatoes, seeded and cut into chunks
1 medium red onion, sliced thin
1 medium cucumber, sliced thin
1/2 pound feta cheese, crumbled
1/2 cup kalamata olives, pitted
1 head romaine lettuce, torn into bite size pieces
1/3 cup Italian dressing
Salt and pepper the tomatoes, onion and cucumber. In large bowl, toss tomatoes, onion, cucumber, cheese, olives and lettuce with dressing and serve.
CREAMY CUCUMBER SALAD
3-4 cucumbers, peeled and sliced
1/2 red onion, sliced thin
1 ½ cups Ranch or Cucumber Ranch dressing
In large bowl, combine all ingredients, tossing to coat the vegetables. Place in refrigerator and chill before serving.
Greek Orzo Salad
1 1/2 cups uncooked orzo pasta
2 (6 ounce) cans marinated artichoke hearts
1 tomato, seeded and chopped
1 cucumber, seeded and chopped
1 red onion, chopped
1 cup crumbled feta cheese
1 (2 ounce) can black olives, drained
1/4 cup chopped fresh parsley
1 tablespoon lemon juice
1/2 teaspoon dried oregano
1/2 teaspoon lemon pepper
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Drain artichoke hearts, reserving liquid. In large bowl combine pasta, artichoke hearts, tomato, cucumber, onion, feta, olives, parsley, lemon juice, oregano and lemon pepper. Toss and chill for 1 hour in refrigerator. Just before serving, drizzle reserved artichoke marinade over salad.
PEPPER STEAK AND RICE
1 thin beef steak
1 onion cut into strips
1 green pepper cut into strips
1 can beef gravy
Cooked white rice
Soy sauce to taste
Slice steak into medium-sized strips, saute with onions and peppers over medium heat, add gravy. Cook until beef is cooked through and veggies are crisp-tender. Serve over rice with soy sauce to taste.
BARBECUE CHICKEN PIZZA
1 bottle favorite barbecue sauce
3 boneless skinless chicken breasts, grilled and shredded
1/2 onion, sliced thinly
1 green pepper, diced or thinly sliced
1 1/2 cups shredded mozzarella cheese
1 prebaked or prepared pizza crust
Heat oven to 350 Degrees. Mix barbecue sauce and chicken, spread over crust. Saute onions and and peppers. Place on top of pizza, spread with mozarella. Bake for 30 minutes or until all is heated through and cheese is melted and bubbly.
