An easy cheese sauce recipe which includes a little dry mustard and garlic for flavor.
INGREDIENTS:
2 tablespoons butter
2 tablespoons flour
1/4 teaspoon salt
dash pepper
1 cup milk
1/3 cup sharp or mild Cheddar cheese
1/2 teaspoon dry mustard
dash garlic powder
PREPARATION:
In a small saucepan, heat butter over medium-low heat. Stir in flour; cook and stir for about 1 minute. Stir in salt and pepper. Gradually stir in milk. Cook over low heat, stirring constantly, until sauce is thickened.
Add cheese, dry mustard, and garlic powder. Continue to cook and stir until cheese is melted.

Great nachos are all about the quality of the ingredients. I never skimp on what I use - especially the cheese sauce. This one is my favorite.
1/4 cup chopped green pepper
1/4 cup chopped red pepper
4 to 5 cloves garlic, minced
2 scallions, minced
1 tablespoon olive oil
2 tablespoon butter
2 tablespoons flour
1 1/2 cups milk
1 cup cheddar cheese, shredded
1 cup Monterey Jack cheese, shredded
1/4 teaspoon Tabasco sauce
2 tablespoons minced jalapeno peppers
1/4 teaspoon salt
Pinch cayenne pepper
1/4 teaspoon paprika
Mix together peppers, olive oil, garlic and butter in a saucepan. Add in flour and milk and stir until mixture simmers -- do not allow to boil. When mixture begins to thicken, stir in the cheeses and remaining ingredients, Simmer on low heat an additional five minutes or until cheese is fully melted.

Simple...3 lb box of velveeta cheese and 1 can Rotel. Cut up cheese into cubes add Rotel and microwave until smooth and creamy. Delicious on nachos!

1 brick of velveeta
1 can of diced tomato & chillies
1lb package of ground sausage
Cook the sausage drain off the fat and mix cubed up velveeta w/the tomatoes & chillis. Microwave untill cheese is smooth and enjoy
