They go into many different things depending on the animal slaughtered. Some go into animal feed some go into fertilisers in both cases it is ground into a fine powder first. There may be other uses also.

After the meat is mechanically recovered in a centrifuge, the bleached bones are boiled to make stock for soups etc, then ground up and used for fertiliser, a bit gory, What!

At my work we buy the bones for stocks. In some places they are sold for the marrow, which if the bones are prepared properly can be considered quite a delicacy.
