Eggs are the number one protein source, but old eggs can cause fatal food poisoning, so it's best to play it safe and don't go beyond the sell-by date

You really shouldn't keep them after the "sell by" date. Did you know that they sometimes repackage unsold eggs? They could actually be older than the "sell by" date. They were suppose to start stamping all eggs to prove they hadn't been repackaged. I haven't noticed any stamps on my eggs....
