I guess the first obvious question would be: where it Latin America? and not only the country but the city as well, it would be hard to compare in the jungles of Colombia to Rio or Buenos Aires which are very big metropolitan cities.
That it can happen, yes it can. There have been many situations where foreigners go missing for no reason, if they are working here as expats for a big company, these usually have an insurance on them and would conduct an investigation.
If they are in remote locations communication is also hard to find, so they might not go missing but simply be out of touch for several days or a week.

I think Countries like Colombia outside the main cities your chances are much greater. Places like Argentina, Chile, and Costa Rica you really have to go out of your way
I have been in Latin America for a total of 2 years and do not feel threatened.
