from my experience: start with a medium-hot skillet and put a pat of butter in, but not too much. When that's melted, put a scoop of the batter in and move the pan around to spread it out about 1/4 inch thick. when the bubbles that form on the top side are popping slowly and you can see little wisps of steam coming from the underside of the pancake, its time to flip it. work around the edges with a good spatula then slide under it. when you go to flip, you have to commit- don't hesitate or it'll be a disaster. once its over, count to 15, then take it off. You should now have the perfect pancake. also, if you're not going to make your batter from scratch, then I recommend hungry jack pancake mix

PERFECT BUTTERMILK PANCAKES
2 eggs
2 tbsp. butter, melted
2 c. buttermilk
2 c. flour
1/2 tsp. soda
1 tsp. baking powder
1/4 c. sugar
Salt
Beat eggs, butter and buttermilk until blended. Stir dry ingredients together. Add to liquid and mix just enough to make a creamy batter with some small lumps. If too thick, add a little more milk or water.

Don't over beat your batter, leave some lumps. This the secret to high fluffy pancakes.
Also works for muffins.

Use a little less water, than suggested, and make sure you cook them long enough on both sides, to get done, but not burnt or dark brown. I always set the griddle to 350 to 375 degrees. And use a good recipe or the right mix.

I like to add lemon juice to the mix at the very end of the mixing. the acid in the juice reacts with the baking soda and gives the pancake extra fluff.

I add about 1/5 of some vanilla coffee creamer to the mix. It gives it a vanilla flavor obviously, but it's light. It gives them a great smell too.

Dont flip til you see the bubbles! I always forget that one.

mix should be some what thick,when cooking first side turn only when you see bubbles forming then turn
