Usually most Gouda cheeses are enclosed in a wax casing. But I know that the smoked one is actually the rind of the cheese as it ages, so theoretically you can eat it if you like the texture and toughness.

It has been a while since I've had much to do with cheeses, so I might well be wrong. I think it might be wax. It's probably best not to try eating it, because it'll taste awful. As I said, I might be wrong, but better safe than sorry.
