Everytime I wear my hair down it ends up getting really puffy. Is there any products that I can use to keep it from getting puffy when I go out?

Try Magic by Osis. It is usually only sold in salons and costs a little more than I would usually spend, but one tube lasts me almost a year. I have naturally curly hair and I straighten it everyday. This product is the only cure I have found for puffy hair. I love it!

That new helen curtis stuff has proved to be a godsend to me, its called sunsilk anti-poof. I use all three products. I'm still kinda poofy on the first day I wash my hair, but days two and three it actually lies flat! (Washing my hair every day makes it poofy no matter what I do)
Also, the new ice shine conditioner seems to help some - and I live in a place with lots of humidity (we have ice fog at the moment) so I know about the humidity battles!

If you use a blow dryer make sure to finish by using the cool shot button on it. On most dryers you have to hold the button down. This cools the hair down and prevents the frizzes and puffiness.

There is this shampoo called Brilliant Brunette and it tends to make my hair a little heavier so that it lays almost flat. It also makes your hair a shinier darker shade of brown.

If you want to spend a little more, try Paul Mitchel's Super Skinny serum. Its really light, so you can use a bit more if you need to without getting heavy or greasy. They even have shampoo and conditioner if you really really need it.
