INGREDIENTS
1 (12 ounce) package vegetarian burger crumbles
3 (15.25 ounce) cans kidney beans
1 large red onion, chopped
4 stalks celery, diced
2 red bell peppers, chopped
4 bay leaves
2 tablespoons hot chili powder
3 tablespoons molasses
1 cube vegetable bouillon
1 tablespoon chopped fresh cilantro
1 teaspoon hot pepper sauce
salt and pepper to taste
1 cup water
3 tablespoons all-purpose flour
1 cup hot water
DIRECTIONS
In a slow cooker combine vegetarian crumbles, kidney beans, onion, celery, bell pepper, bay leaves, chili powder, molasses, bouillon, cilantro, hot sauce, salt, pepper and 1 cup water. Cook on high for 3 hours.
Dissolve flour in 1 cup hot water. Pour into chili and cook 1 more hour

This recipe is great because it doesn't require any ingredients you can't get at a regular grocery store. Even meat eaters like this one, and it's very hearty.
2 cups elbow macaroni
4 cups water
1 onion, chopped
1-2 tablespoons water
1 15-ounce can tomato sauce
1 15-ounce can water
4 teaspoons chili powder
salt and pepper to taste
10-ounce box frozen corn
19-ounce can kidney beans, drained (or 2 cups cooked kidney beans)
1-3 tbsp. nutritional yeast
Cook pasta in water until tender. Drain. Sauté onion in a large, non-stick pot, adding water as necessary. Add remaining ingredients, as well as cooked pasta. Simmer 15 minutes, stirring occasionally. Serve hot.

Eggplant parmesan
* 3 eggplant, peeled and thinly sliced
* 2 eggs, beaten
* 4 cups Italian seasoned bread crumbs
* 6 cups spaghetti sauce, divided
* 1 (16 ounce) package mozzarella cheese, shredded and divided
* 1/2 cup grated Parmesan cheese, divided
* 1/2 teaspoon dried basil
1. Preheat oven to 350 degrees F (175 degrees C).
2. Dip eggplant slices in egg, then in bread crumbs. Place in a single layer on a baking sheet. Bake in preheated oven for 5 minutes on each side.
3. In a 9x13 inch baking dish spread spaghetti sauce to cover the bottom. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella and Parmesan cheeses. Repeat with remaining ingredients, ending with the cheeses. Sprinkle basil on top.
4. Bake in preheated oven for 35 minutes, or until golden brown.

Spinach Salad with Orange-Soy Dressing, Candied Almonds and Sweet Potato Croutons
Orange-Soy Dressing:
1/4 freshly squeezed orange juice
1 1/2 tablespoon soy sauce
1 tablespoon rice vinegar
1/4 cup safflower or other light oil (I used hemp, delicious and nutritious!)
Candied Almonds:
1/2 cup slivered almonds
1 1/2 teaspoon agave nectar (or brown rice syrup)
1 teaspoon or so cooking oil
salt
Sweet Potato Croutons:
1 medium sweet potato, cubed
1/2 teaspoon each basil, oregano, chili powder
1/4 teaspoon each mustard powder, onion
powder, garlic powder
Cooking oil
Salad:
1 beet, shredded
Desired amount of fresh baby spinach leaves
1 carrot, shredded
2 oranges, peeled and chopped
Directions:
Orange-Soy Dressing:
The recipe for the Orange-Soy Dressing is provided courtesy of The New Now and Zen Epicure with permission from the Book Publishing Company.
It's very important to squeeze the orange juice right before using, or it will lack the necessary aroma and flavour. Mix the juice, soy sauce, and vinegar together, then whisk in the oil slowly until thickened.
Candied Almonds:
Turn oven on 'broiler' setting. Spread almonds out on a baking sheet and drizzle with nectar/syrup and oil. Use desired amount of salt. Bake under broiler until lightly browned. Set aside to cool.
Sweet Potato Croutons:
This is basically how I always eat sweet potatoes, this time only in smaller cubes with a nice crispy texture.
Cube sweet potatoes about 1/2-1 inch in size. Mix spices in a Tupperware-type container. Throw in sweet potato, put on the lid and shake. Empty onto lightly oiled baking sheet, spraying a little extra oil on top of the potatoes.
Bake for about 10 mins on 350 (keep checking to see if potatoes have softened). Once they are almost cooked, turn on the broiler in your oven. Lightly brown the croutons, remove from oven, flip them over, spray lightly with oil and return to oven to lightly brown under the broiler again.
Salad:
Mix all salad ingredients together in large salad bowl with almonds, croutons and salad dressing!
Serves: 4-6
Preparation time: 30 minutes
Coconut Eggplant Surprise
1/2- 3/4 lb eggplant, halved
1 can coconut milk
1 cup frozen peas
1 can chickpeas
1 1/2 cups cooked (leftover) brown rice
chopped shallots
salt and pepper to taste
Directions:
In a preheated 350 degree oven, place the eggplant on a cookie sheet or shallow baking pan (skin side down). Let it bake for 20-25 minutes.
Meanwhile, in a large mixing bowl combine all of the remaining ingredients and mix.
When the eggplant is done, scoop it out of its shell and add it to the mixing bowl with the other ingredients.
Transfer this mixture to a casserole dish, cover with foil, and place it in the oven for an additional 25 minutes. This casserole is great with crusty bread and a salad.
Serves: 3-4
Preparation time: 50 minutes

what about chili? Or meatless Lasagna(you can add or subtract anything you want with that) You can get a good pre made one at any super market. they are really good. I am a meat eater and I have had them when I have had veggie friends over. Also I have had a finger food dinner with lots of different types of meat and meatless hordervers to choose from as the meal.
