The mass (amount of matter) can't just disappear. The matter, however, can break down and change form.

Are you asking if bacteria can decompose? Enzymes can break apart the cells and the cell contents. Also, bacteria can be eaten and digested.

nope the mass is conservative so it will remain in a closed system because a close system do not permits matter exchange with the surroundings. What eventually is going to happen is that the polymers are going to hydrolyze and the complex structures are going to be degraded to more elemental forms but the mass will remain the same.
