i make this for my husband he is a diabetic
Ingredients
PASTRY
2 1/2 cups all-purpose flour
1/8 teaspoon salt
1/4 cup butter or stick margarine (not reduced-calorie)
1/4 cup canola oil
5-7 tablespoons skim milk
FILLING
2/3 cup frozen apple juice concentrate, thawed
2 tablespoons cornstarch
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
5 cups peeled and sliced tart apples
1 tablespoon butter-flavored sprinkles
Preparation
1 TO MAKE THE PASTRY: Preheat the oven to 400 degrees. In a medium bowl, stir together the flour and salt. Using a pastry blender, cut in the butter or margarine. In a cup, stir together the oil and 5 tablespoons of the milk. Drizzle the oil mixture over the flour. Using a fork, toss and stir lightly until the flour is moistened. If necessary, add enough of the remaining 2 tablespoons milk to moisten. Then, using your hands, gently shape the mixture into a ball. Divide into 2 balls. Place 1 ball of dough between two 12-inch square pieces of wax paper. Gently roll into a 12-inch circle. Remove the top piece of wax paper. Then invert the dough onto a 9-inch pie plate. Remove the remaining piece of wax paper and gently fit the dough into the pan. Place the remaining ball of dough between two 12-inch square pieces of wax paper. Gently roll into a 12-inch circle. Set aside.
2 TO MAKE THE FILLING: In a medium saucepan, whisk together the apple juice concentrate, cornstarch, cinnamon, nutmeg and cloves. Cook over medium heat, whisking constantly, until the mixture begins to thicken and just comes to a boil. Remove from the heat and set aside. Invert the remaining dough circle over the apple filling. Fold the edges of the pastry under and flute. Use a sharp knife to cut 2 to 3 slits in the top crust. Bake for 40 minutes, or until the apples are tender and the crust is golden. Cool on a wire rack
Makes 6 servings.

6 cups sliced peeled tart apples (approx. 4 large)
1/3 cup apple juice concentrate
2 tablespoons quick cooking tapioca
1 teaspoon ground cinnamon
1 unbaked pastry shell (9 inches)
1/2 cup chopped walnuts (up 3/4 cup to taste)
In a large bowl, combine the first four ingredients; let stand for 15 minutes.
Stir and pour into pastry shell.
Sprinkle with nuts.
Bake at 425 degrees for 15 minutes.
Reduce heat to 350 degrees; bake 40-50 minutes longer or until apples are tender.
Cover edges with foil during the last 15 minutes if necessary.
Let the pie cool before serving.

Use any pie recipe. Replace the sugar with splenda in that same amount as the recipe calls for sugar. Wahlah! Sugarless pie of any kind you like. Also can replace sugar with honey, though honey is a natural sugar.

This one is really good. Its apple.
* 2 (9 inch) pie shell
* 3 tablespoons cornstarch
* 1 tablespoon ground cinnamon
* 1 (12 fluid ounce) can unsweetened apple juice concentrate, thawed
* 6 cups sliced green apples
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a small bowl whisk together cornstarch, cinnamon, and 1/3 cup of the apple juice concentrate. Set aside.
3. In a large saucepan simmer apples with remaining apple juice concentrate until apples are tender, about 10 minutes. Stir in cornstarch mixture and continue to simmer until thickened. Remove from heat.
4. Spoon apple mixture into pastry-lined pie plate. Cover with top crust. Seal and flute edges. Cut steam vents in top.
5. Bake in preheated oven for 45 minutes, or until crust is golden brown.
Just in case you dont like apple, here's pumpkin:
* 1 (9 inch) pie shell
* 1 egg
* 6 packets granulated artificial sweetener
* 1 teaspoon pumpkin pie spice
* 1 cup pumpkin puree
* 1 cup evaporated milk
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a medium bowl whisk together egg, sugar substitute, and pumpkin pie spice until well blended. Add pumpkin and milk to egg mixture, and stir until smooth. Pour mixture into pie shell.
3. Place pie on a baking sheet and bake in preheated oven for 30 minutes, or until set in center.

FRESH FRUIT PIE
Pie shell
GLAZE:
1 c. sugar (or less)
1 c. water
3 tbsp. cornstarch
3 tbsp. flavored gelatin
Bring glaze to a boil and thicken. Cool. Place fruit in prepared pie shell. Pour cooled glaze over the top.
Combinations of fruit and Jello: Orange Jello - mixture of fruit; peach Jello - peaches; strawberry Jello - strawberries; blackberry Jello - blackberries or blueberries; raspberry Jello - raspberries.
