I have always wanted to make good minestroni..what is a good recipe that is easy for a teenager to make but still homemade.

Italian Minestroni

1 cup minced onion
1 cup minced celery
1 cup minced carrot
1/4 cup butter OR margarine
48 oz. can tomato juice
6 cups water
1/2 cup garbanzo beans
1/2 cup kidney beans
1/2 cup dried split peas
1/2 cup dried lentils
3/4 cup sliced carrots
3/4 cup chopped onion
3/4 cup sliced celery
3/4 cup chopped bell pepper
1/2 cup rice or barley
2 Tbsp. minced fresh parsley
1 tsp. dried oregano
1 tsp. dried basil
2 tsp. soy sauce
black pepper - to taste
1 cup shell macaroni - un-cooked
Parmesan cheese - to top

In a large pot, sauté onion, celery, and carrot in butter until browned.Add tomato juice, water, garbanzo beans, kidney beans, dried peas, and lentils; bring to a boil.Simmer over low heat for 2 - 2 1/2 hours, until everything is tender.Add remaining ingredients, except cheese and pepper; simmer for 40 minutes.Season with pepper, add the macaroni, and simmer for 20 minutes.Ladle into bowls and sprinkle with Parmesan cheese

EASY HOMEMADE MINESTRONE SOUP

RECIPE INGREDIENTS:
2 tablespoons butter
1/4 cup olive oil
2 yellow onions, thinly sliced
2 carrots, scrubbed and diced
2 stalks celery, diced
3 medium potatoes, scrubbed and diced
2 zucchini or summer squash, diced
1 cup green beans, diced
4 cups green cabbage, shredded
1 13 3/4-ounce can beef broth, mixed with 5 cups water
1 28-ounce can peeled Italian plum tomatoes with their juice
1 19-ounce can canellini or Great Northern beans
Salt and pepper to taste
In a large soup pot, melt the butter with the oil and add the sliced onion, cooking over low heat so that the onions wilt but don't brown.

Add the other fresh vegetables in the order they are given, cooking each addition covered for three minutes while stirring occasionally to prevent sticking or burning.

When adding the shredded cabbage, cover and allow to cook for six minutes.

Add the broth, water, and tomatoes. Partially cover the soup again and simmer for 45 minutes.

Stir in the beans and taste for seasoning - add salt and pepper to taste.

You can also add some cooked pasta just before serving if you like.

Minestrone is meant to be a thick soup; if it seems too thick, you may add hot water or more hot broth. If it seems too thin - you can add some parmesan cheese.

This minestrone gets better with age. It can be kept up to a week in the refrigerator or a month in the freezer. Serves eight.

HEARTY MINESTRONI SOUP

6 oz. turkey Italian sausage
1 c. diced onions
2 c. sliced carrots
2 c. sliced zucchini
1 c. (14 oz.) Italian tomatoes
2 c. finely chopped cabbage
4 tsp. beef bouillon
1 1/2 tsp. basil
1 (1 lb.) can Great Northern beans, drained
Salt and pepper to taste

Spray pan with Pam. Cut sausage into small pieces. Brown until pink color disappears. Add onions, carrots, and basil; cook 5 minutes. Add tomatoes with liquid (water to = 4 cups), bouillon, cabbage, salt, and pepper. Bring soup to a boil; reduce heat and simmer, covered, for 45 minutes. Add beans. Cook another 20 minutes. 4 servings. 150 calories.

Minestrone Soup

Ingredients:

1 lb hamburger
1 c chopped onion
1 t minced garlic
1/4 tsp Pepper
1 can beef broth
2 cans water
3 tsp beef soup base (heaping)
1 1/2 tsp Italian seasoning OR
1/2 tsp EACH fresh oregano, basil, sage, rosemary, and thyme.
16 oz Can whole tomatoes, broken into bite sized pieces
8 oz can kidney beans, un-drained
1 1/2 c sliced carrots
1 c frozen green beans
1 c frozen lima beans
1 c small seashell macaroni


Brown hamburger, onion, garlic and pepper. Add rest of ingredients except macaroni. Cook for at least 20 min add macaroni and cook until macaroni is done.

Easy and good. In a large pot add tomato juice and water to make a veggie broth. Add chopped onion, zucc, carrots, celery. Add canned kidney beans- rinsed. Add a bay leaf or two, celery salt (optional),and pepper. Precook your favorite pasta in another pot. Rinse and add to soup pot. Discard bay leaves before eating. Good with fresh grated parm!
