what sounds good on the side of fried catfish ..the only thing i dont have is greens to make a salad ..but i got every thing else somthing quick and simple

Homemade hush puppies- from cornbread mix
Sweet corn on the cob
Fried okra- ha, it's the southern belle in me
Cheddar or buttermilk biscuits
Creamy coleslaw
Steak fries

- Why not try toasting some baguettes or or deli bread and making a catfish sandwich? Maybe a twist of lemon juice and tartar sauce in the sandwich? Ya got me hungry, now!

I always make a quick cole-slaw.
If you have a head of cabbage, carrots, and a little red onion, you're set.

Slice the cabbage in half, cut the core out, then place the cabbage on a cutting board and slice it into slithers. Add some carrots, you can take a peeler and peel them into the bowl with the cabbage or if you have a salad shooter, food process them in.
Next, add onion to taste, you don't have to have it, but I always like the taste of a good red onion in my slaw.

Add mayonnaise to taste, and mix it up with some salt and pepper, and you have a delicious cole-slaw.

some braised escarole would sound pretty tasty. or maybe some sauteed spinach. sauteed in some garlic and shallots, seasoned with fresh ground black pepper and salt, then finished with a knob of butter.

rice. cajun flavored. try Zatarain's Jambalaya without any meat at all in it. very tasty.
