I am looking for a vegetable beef soup recipie... Everyone that I find has tomatoes in it.. My grandmother used to make it as I was growing up and I can't seem to find a recipie that is even close to hers.. She passed away, so I can't ask her for the recipie. Does anyone make their own type of this soup without the tomato chunks in it.. If so please tell me how you make it and I will give it a try.. Thanks

Here is a very simple and delicious recipe...

1&1/2 pound DICED eye round
1/2-1 pound diced carrots (or sliced if you prefer)
2-3 medium onions, diced
1/2 HEAD of celery, sliced (I use top half, leaves and all)
1-2 pounds pealed diced potatoes

Oil bottom of soup pot to coat, add beef, salt, and pepper and cook on high stirring frequently till well browned, add vegetables and continue stirring over medium heat five minutes.

Add potatoes and water to cover (about one inch) and bring to boil. Taste for salt and pepper, add an herb if you like (thyme, basil, parsley, dill, etc.). Reduce to simmer and let cook 1-2 hours. You could also add a package of frozen chopped spinach here and it would be good too.

Soup will be hearty

Suggestion: instead of salt use beef boullion or base to enhance flavor.

Well, mine normally has tomatoes in it, but there is no reason you can't leave it out.I just take beef stock, microwave (to precook) onions carrots and cabbage, add that to the stock along with whatever canned veggies are around (corn, peas green beans) plus I cook up some barley in some of the beef stock and add that. Some salt and pepper and you're done (always better if you let it simmer awhile)

1 pound beef stew meat -- cut in 1-inch cubes
2 onions
2 potatoes
3 carrots
3 celery stalks
1/4 head cabbage
3 tablespoons margarine
1 1/2 teaspoons salt
1/2 teaspoon black pepper

1. Melt margarine in a large heavy pot with lid. Trim meat of all fat and cut into 1-inch cubes. Brown beef on all sides.

2. Add vegetables (except cabbage) which have all been sliced into pieces of approximately the same size. Add 5 cups water. Cover and simmer for 1-1/2 hours, adding more water if needed.

3. Slice cabbage and add to pot along with salt and pepper. Simmer for 20-25 minutes longer.

i use beef ,veggies and beef bullion no tomatoes at all plus bay leaves and a little garlic ,salt and pepper
