I see you have the right answser already but let me explain why it is right, as my Mom taught me this years ago. My number 1 choice when frying chicken (YuM...don't do that treat too often) is to soak it in milk. And #2 milk does the trick too FYI. Might not be as good as whole milk or buttermilk, but it's definately good enough!
Milk is a natural tenderizer to chicken, so you are not only adding a wet substance that help coat it, but you are helping the overall quality! I'm usually lazy and just use the milk as one would an egg, but if you really want it best soak the chicken in the milk for half an hour or so. (Also cornstarch helps on this front as well, which is why it is so often used as a coating in Chinese cooking).
Now one more tip....if you just dip in milk then a coating it will be a thinner coating than if you used egg. If you want a thicker coating I would suggest a double dip--milk, coating, milk, coating. That's just personal choice. One time I tried first doing a mikl dip and coating and then an egg dip and coating. Truthfully I cant say it did anything special. Also be sure to press in the coating when usuing milk to make sure you get a more even coat. Also turn with a lighter hand when cooking until a seal is formed...it's a more tender crust and you want to make sure it stays on the chicken! But these are just tips making it seem far more complicated than it is...so dont sweat em. Just read, keep in mind and it will make sense and be simple to do.
Bet once you try it, you will always make it this way. Friends always ask why my Fried Chicken is better/different. It's the milk I tell you! Of course a heavy skillet and good seasoning doesn't hurt either lol. And I would highly recommend a good basic oil IE Mazola Corn Oil IMHO. Fancy oils and olive oil will just take away from the flavor since it adds it's own taste to it, and gives the chicken a different texture. Same way I don't think corn meal adds anything good to the mix. I personally want to taste fried chicken not oil & unusual textures when I make it. So just use what you like and it will be great. And using plastic or zip lock bags for this makes it super easy to prepare and clean up. Enjoy!

The best way is to use the three step process. A bit more time consuming but worth the effort.
1)dip the chicken in flour then
2)dip the chicken in an egg/milk mix (1 egg to 1/4 cup milk) then
3)dip in cornmeal
It will stick very well. Your fingers and kitchen will be a mess but it will pay off. Enjoy!

Sorry, yet there's no longer something which will reproduction the style of real eggs, basically as there's no longer something which duplicates using real butter. basically ask Julia baby. She under no circumstances did another to the two eggs OR butter. the reason being the egg yolks which incorporate fat and proteins it incredibly is the place maximum folk of the flavour COMES from. The whites, via themselves, basically reason the flour to stick to the exterior. you could desire to attempt basically utilising the whites basically to be certain what you get. The whites would enable many of the egg style to return by way of without the fat and proteins of the yolk. Or, you could desire to attempt milk or basically water because of the fact the wetting agent to make the breading stick. the full factor is to make the coating stick so it turns into an critical area of the exterior it incredibly is what gets the oil and separates the beef from the oil which you fry in. you will besides roast the poultry like a turkey quite of frying and bypass all the oil and fat. The eggs are the least of your concerns concerning to the fat and such while you're deep frying.

I agree that yogurt is the way to go. It's great because it is fairly cheap to get a huge tub. I've also read that mayo can be used as well but no fat plain yogurt is the healthiest.
