Pepperoni Pizza Soup
Make this recipe campfire-friendly by chopping up the veggies, cheese and pepperoni at home. Store in individual baggies, put them all in a larger baggie and toss the whole thing in the cooler.
2 tablespoons olive oil
1 small onion, chopped; 1/2 cup fresh mushrooms, sliced; 1/2 cup green pepper, chopped
1/2 cup pepperoni slices
2 cloves garlic
2 cups beef broth (2 beef seasoning packets and 2 cups water)
1 cup tomato sauce
1 teaspoon basil
2 packages ramen (no seasoning packet)
1/4 cup mozzarella cheese
1. In medium saucepan, saute onions, mushrooms, green pepper, pepperoni and garlic in olive oil until tender.
2. Add broth, tomato sauce, basil and raw noodles. Simmer for about 10 minutes or until mixture thickens.
3. Top with mozzarella.
Yields 4 servings
Mexicana Casserole
1 package chicken mushroom ramen noodles
1/2 cup Monterey Jack cheese, shredded
1/4 cup canned green chilies, diced
1/8 cup black olives, sliced
1/2 cup sour cream
Sliced mushrooms, optional
1/2 cup Cheddar cheese, shredded
1/8 cup Parmesan cheese
Salsa, optional
Guacamole, optional
Cook noodles 3 minutes and rinse with cold water. Combine noodles and seasoning packet with Jack cheese, chilies and olives. Stir in sour cream. Spoon into buttered casserole dish. Top with mushrooms if desired. Sprinkle with Cheddar and Parmesan. Bake at 400 degrees for 20 minutes or until brown and bubbly.
Top with salsa or guacamole if desired.
Chicken Oriental Salad Ramen
1 package any flavor ramen noodles
1 cup blanched slivered almonds
1/4 tablespoon vinegar
1/2 cup oil
3 teaspoons seasoned salt
1/2 teaspoon pepper
3 tablespoons sugar
4 cups cooked chicken breast, shredded
3 to 6 green onions, sliced
1/4 cup sesame seeds
1/2 head lettuce, broken or shredded
Cook noodles for 1 minute and drain (save seasoning packet for another use, such as homemade soup). Roast almonds in oven until lightly browned. Mix vinegar, oil, salt, pepper and sugar. Mix with other ingredients, except lettuce. Add lettuce before serving.
Ramen Fajitas
1 package any flavor ramen noodles
1 tablespoon oil
1 skinned chicken breast, cut in strips
1 cup onions, sliced
Red and green peppers, cut in strips
1 cup salsa
1/2 cup sour cream
Tortillas or pita bread, optional
Cook noodles and drain. Heat oil in skillet and brown chicken.
Add onions, peppers and salsa; cook over medium heat until onions are tender. Serve over noodles and top with sour cream. Wrap in tortillas or pita bread if desired. To soften tortillas, warm them in the microwave for 45 seconds.

Try my recipe for stuffed peppers. It's the easiest thing in the world and so tasty! 4 green peppers 1 lb. lean ground beef 1 egg 1 packet Minute Rice (cooked and brought to room temperature) 3 potatoes, cubed 3 cans Campbell's tomato soup (do not add water) Mix the beef, rice and egg in a bowl with your hands. Cut the tops off the peppers and scoop out any seeds. Fill with beef mixture. Put in a large pot with the potatoes on the side. Cover with the soup and cook for about an hour and a half to two hours if you want the peppers very soft. It's delicious!

Chicken
Cover the bottom of a baking pan with "Catalina Salad Dressing" put chicken on top and then cover chicken with remaining Catalina. Cover and bake until proper temp (about 45 minutes)
It is sooo tender really good and very easy.
One thing my kids really enjoy is MAC Pie as they call it
You fry up some ground beef set aside.
Heat some corn set aside.
Make some Kraft Mac & cheese (follow recipe)
Mix all together put in casserole dish and cover with cheddar and bake at 375 for 15 minutes!!
My measurements for my family (just a guideline)
2 boxes Kraft Mac & Cheese
1/2 can whole kernel corn
1/2-1 lb Ground beef

Lemon Pepper Fish
Season with lemon pepper & garlic.
Line a dish with foil, add slices of butter, green, red or yellow peppers, & onions.
Lay fish on top & add more butter, peppers & onions.
Fold foil, so it's creates a pouch.
Cook in the oven at 325 degrees for about 1 hour.
Fish comes out every tender & full of flavor.
Serve with rice & a mixed veggie.

Smothered Pork Chops
Ingredients
Any cut of Pork Chops
Half a white or yellow onion
One Red Pepper
Minced garlic
1 can cream soup (I like cream or mushroom)
1 can gravy
3-4 cups of water
Seasoning (salt, pepper, sage, garlic powder)
Olive Oil
Add about 3 tablespoons of olive oil to a deep pot (about 4 inches)
Add minced garlic, sliced onions & red peppers & sautee
Season pork chops
Take out the garlic, onions & peppers & place to the side in a bowl
Brown each side of the pork chops (1-2 minutes per side, med flame)
Add all the browned chops to the pot (probably will have to put them on top of one another)
Place the garlic mixture on top of chops
In a measuring cup or bowl mix the water, cream soup & gravy.
Pour this mixture on top of the chops.
Cover pot & bring to a boil.
Once it's boiled, turn flame down low & let it simmer for about 2-3 hours. The longer it simmers the more tender the meat will be.
Serve over rice or with mashed potatoes along with a veggie if you like & enjoy.
You can also do the same with steak, but instead of cream soup & gravy just use steak sauce & hot water & don't use the sage.

Gravy Baked Pork Chops
Ingredients:
4 pork chops
salt and pepper
1 tablespoon hot shortening
1 can cream of mushroom soup or cream of chicken soup
2/3 cup evaporated milk
1/3 cup water
Preparation:
Season chops, brown in shortening, pour off drippings. Mix soup, milk and water and pour around chops. Bake at 350 degrees F for 45 minutes until tender.
You can also cook on top of stove.

Well, how about a roast? Buy the cheapest beef or pork roast you can find. Rinse the roast in cold water, pat dry, sprinkle with your favorite seasonings, (I use garlic powder, salt and pepper)add peeled carrots and new potatoes to your roasting pan, pour one can of condensed cream of mushroom soup over the roast and veggies (grocery store brand is fine) do not add water. Cover tightly. Cook on low (approximately 250-300 degrees) for about 4 hours. The roast will fall apart with your fork when it is done. No need to baste or stir, as long as it is covered tightly, it will be moist. Enjoy!

CHICKEN DIVAN.
INGREDIENTS:
2 pkgs frozen chopped broccoli, (10 oz each)
6 chicken breast halves, boneless, skinless
water
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 can cream of chicken soup, reduced fat
1 cup mayonnaise
2 teaspoons lemon juice
2 cups shredded cheddar cheese
1 cup potato chips, crushed, or other topping
PREPARATION:
Cook broccoli until tender. Place chicken breasts in a large pan; cover with water and add Worcestershir sauce and garlic. Bring to a boil; reduce heat and simmer about 25 minutes. Drain and cool. MIX TOP 5 INGREDIENTS AND LAYER WITH BROCOLLI AND CUT CHICKEN IN PAN THEN BAKE.

Beefy Mac and Cheese

Ingredients:
1 pound ground beef
2 T. butter or margarine
Small onion or half of a large onion, chopped well
1 box macaroni and cheese, prepared as directed
1 can condensed cream of mushroom soup
1/2 c. milk
Directions:
Preheat oven to 350 degrees. Spray casserole dish with nonstick cooking spray (not necessary, but makes cleanup easier). Cook together beef, margarine and onion until beef is brown and onion is cooked. Add cream of mushroom and milk to beef mixture and cook over medium heat, stirring constantly until smooth. Layer beef mixture and macaroni and cheese, beginning with mac and cheese and making sure the last layer of mac and cheese is covered by the beef mixture. Bake for 25 minutes or until bubbly. ENJOY!

Italian Meatballs

These are great served with your favorite pasta, or on sub rolls for meatball sandwiches.

Ingredients:
3 slices of bread cut into small cubes (including crusts)
1 egg
1/4 c. milk
1/4 tsp. salt
1 tsp. garlic powder
1/4 c. dried parsley
1/2 T. dried basil
1/3 c. grated parmesan cheese
1lb ground beef, or beef with pork mixture
Directions:
In a large mixing bowl stir the bread, egg and milk to completely combine and let it sit for 15 minutes. Mash up the mixture with a fork to make a smooth paste. Add all of the seasonings and cheese and mix well. Add the beef (or beef and pork mixture) and stir together until completely combined. Form the mixture into balls (about the size of a golf ball) and place on a GREASED baking sheet (for easier handling when forming meatballs, lightly wet hands with water and the mixture won't stick to your hands).
Bake in a preheated 400-degree oven for 20 minutes, turning over after 10 minutes. Drain the meatballs on a paper towel and place in a large glass bowl. Add 2 cups of your favorite spaghetti sauce and stir just enough to cover meatballs. Cover bowl with paper towel and microwave on medium for five minutes, stir, recover and microwave on low for an additional 20 minutes.

INGREDIENTS for GARLIC BROILED CHICKEN
1/2 cup butter
3 tablespoons minced garlic
3 tablespoons soy sauce
1/4 teaspoon black pepper
1 tablespoon dried parsley
6 boneless chicken thighs, with skin
dried parsley, to taste
DIRECTIONS
Preheat the oven broiler. Lightly grease a baking pan.
In a microwave safe bowl, mix the butter, garlic, soy sauce, pepper, and parsley. Cook 2 minutes on High in the microwave, or until butter is melted.
Arrange chicken on the baking pan, and coat with the butter mixture, reserving some of the mixture for basting.
Broil chicken 20 minutes in the preheated oven, until juices run clear, turning occasionally and basting with remaining butter mixture. Sprinkle with parsley to serve.

I made this and it was a hit so I guess it's good:
1 can of pears (a.k.a canned pears :D )
2 egg whites + 1 egg
1 box cake mix
MIx all ingredients together until pears are completely mashed and there are no clumps. Cook in a greased and lightly floured Bundt pan for 38-43 min. @ 350 F. (or until it is done) Tip: Let the cake cool completely in pan or it will crumble. :)
Serve with pudding of any flavor and/or Cool Whip and strawberries!!
