Sweet & Sour Meatballs

1 lb ground beef
1 tsp garlic salt
dash pepper
1 sml can pineapple (optional)
1 can or jar sweet & sour sauce (I like the Contadena brand, but any will work)


Combine first 3 ingredients. Make into meatballs, 1 to 1 ½ inch wide. Place in shallow casserole dish and bake in 350 F oven, for 20 minutes. Drain of grease. Bake for 10 more minutes. Drain again. Pour sauce over meatballs and bake for 15 minutes. Serve over rice. Makes 2-4 servings.


Creamy Fettuccini Alfredo

1 – 8 oz. Package Philly Cream Cheese (I use the light version – 1/3 less fat), cubed
¾ cup (3 oz.) fresh grated Parmesan cheese (I like De Giorno, don’t use Kraft)
½ cup margarine (I use I Can’t Believe It’s Not Butter Light)
½ cup milk (I use 1% or 2% low fat)
8 oz. fettuccini, cooked, drained (I use the fresh Contadina low fat one)


In large saucepan, combine cream cheese, Parmesan cheese, margarine and milk.
Stir over low heat until smooth. Add to drained fettuccini and toss lightly. Sprinkle with fresh Parmesan cheese if desired. Makes 4 servings.



Chile Verde

4 lb pork roast (boneless butt or shoulder), cut in chunks
1 large can Ortega chopped green chiles
1 small can Ortega chopped jalapenos


Place pork roast in crock pot. Add green chiles and jalapenos, but no water. Cook on high 8-10 hours. Serve with flour tortillas, beans and mexican rice.

o whats really good its a whole baked chicken($5) n some ready pack salad ($2) n dinner rolls($2) for a pack of six anll for under 10 bucks or if ur lucky the salad its on special n get 2 for 1 or chicken its on special too so give it a try the chicken its really good n satesfing

homemade chicken and dumplings, with a homemade peach cobbler for dessert, can feed 5 people well for under $10 Serve with tall cold glasses of Iced tea. (or if you're really classy, serve the tea in quart mason jars!)

I guess it depends on grocery prices where you live, but in Texas I can feed 2 adults and 4 teenagers with spaghetti and meatballs (made from scratch-recipe from allrecipes.com), salad and garlic bread.

Real meals? Then I'd have to say Lean Cuisine, of course! It's easy if you need something quick and easy to make for a small group or just yourself. Plus, they can be healthy!

Canned tameles and red sauce. With rice.... hmmm... good and so cheap. Salad on the side.

Go to a buffet, it costs about 10 bucks and you'll get all the home-cooked food you can eat.

Ribeye steak, twice baked potatoes, stuffed mushrooms and a salad (if you cook it yourself it is really quite affordable)
