HONEY GLAZED BABY CARROTS
2-3 cups small baby carrots (pre-peeled)
1/2 cup butter
1 tablespoon brown sugar
1 tablespoon honey
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
fresh minced parsley and/or chives
In a medium skillet, melt butter. Add brown sugar, honey, nutmeg and cinnamon; mix together. Add Carrots. Cover; cook on medium low to medium heat for about 15 minutes, stirring occasionally. When finished cooking, the carrots should be firm, not mushy.
Remove from skillet and sprinkle with fresh parsley and/or chives. Serve.
STEAMED BABY CARROTS
16 baby carrots, scraped or frozen
1 tsp. soy or safflower butter
1/8 tsp. freshly grated nutmeg or dash of ground nutmeg
Steam the baby carrots in a saucepan with 1/4 inch of water until crisp-tender, about 4 minutes. Drain and toss with the butter and nutmeg. May also be prepared in the microwave. Serves 3-4.

This is a holiday favorite
2 pounds baby carrots
2/3 cup orange marmalade
2 tablespoons brown sugar
2 tablespoons butter
2 tablespoons rum
1/2 cup toasted pecans, coarsely chopped
In a vegetable steamer over boiling water, cover and steam carrots about 10 minutes or until crisp tender. Transfer carrots to a serving bowl. Stir marmalade into carrots until marmalade has melted.
Combine brown sugar, butter, and rum in a small saucepan. Cook over medium heat until butter and brown sugar melt. Remove from heat, and stir in pecans. Pour over carrot mixture in bowl. Toss gently.
Serves 8 as a side dish.

Orange Glazed Carrots Recipe
Ingredients:
1 1/2 lb. carrots, your babies will work
1/2 tsp. salt
1 1/2 cups water
4 Tbsp. butter
1 large orange, sliced
1 cup maple syrup
Scrape carrots and cut in halves lengthwise. In a frying pan, combine carrots with salt and water. Bring this to a boil, cover and cook for 10 minutes. Uncover and cook for 3 minutes longer until liquid evaporates. Add butter, orange slices and syrup. Cook slowly, turning carrots to coat, for 15 mintues. Serve immediately.

my daughters love baby carrots with honey and balsamic vinegar!
Boil carrots in water until tender.
Drain carrots and transfer to big frying pan.
add lotsa butter, honey and basalmic vinegar and cook over a medium heat until you end up with a semi thick sauce. Don't use too much of the ingredients or you will be cooking them down forever!

anything that you would do with full size carrots... the baby carrots are actually full size carrots that were not shaped nicely enough to sell whole, and so were then whittled down to "baby" size... steam them, add them to stir fry, chop & put in soup or salads, or just serve them raw with some dip.
